Albert, I have 3rd stage kidney disease and am diabetic. YT pushed some of your videos my way as I began searching for creative recipes for chickpeas. I have to forego meat altogether per my nephrology dietician to save my kidneys, and coming from a hard core clan of carnivores I was having some difficulty with plant based meal prep. You have NO idea what a difference your recipes have made to my health and labwork! You have NO idea what a difference you have made to my family. Now we enjoy your delicious plant-based recipes 4 to 5 days a week. I prepared this delicious Spanish Gypsy Stew this evening and my family raved about it. What a wonderful new variety of flavors and combinations you have shared with us, and they are EXACTLY as you describe: "an explosion of flavors and so easy to prepare"! Heartfelt thanks. I am a dialysis patient, diabetic too. Been looking for ways to incorporate more veg in my diet. The soups and stews this guy brings out for us look really good and I can't wait to try! Good luck to you in taking care of yourself.

I hate it when people tell you how great something turned out when they replace all the ingredients, but I did not have spinach for the broth. It still turned out great and was easy. I replaced the pear in the soup (no pears), and I used hot papricka instead of sweet (we like a kick). However everything else I followed to a "T". It is great! We are vegetarians, and it's hard to find tasty, filling food that is not full of fat and cheese. Thank you!

Im out of pumpkin so I used the last of my buternut squash. An easy substitution for those of us who wont see a pumpkin until fall.
Our daughter is a celiac so I use gluten-free bread and that works too. Cant wait to make this again.

Interesting comment about not detecting an accent in the young mans English
I speak English with an Australian Accent any you Carina would probably have an American accent to your English
There are so many different accents in the English language depending where you live in the world if British English is not your primary language
My son in law speaks English with a mixture of Irish and London accents as there is where he learnt the language
My older sister and brother both had Italian accents in their English as they were teenagers when the family immigrated to Australia
My other brother was three years old and I was twelve months old so we both don’t have Italian Accents but Australian as here is where we learned
I also speak Italian and the language of my region in Italy and by the way understand a little Spanish as it is also a Latin based language
Anyway, languages have always been interesting to me

Hi. I made this stew today and it was very good. I used Acorn Squash instead of pumpkin. No problem, it still worked well. I used more garlic and more smoked paprika as I like these ingredients a lot. So far this may be my favorite dish from the ones you posted on UA-cam--a definite keeper. Next I'll make your Patatas Panaderas recipe. Thanks very much!

I would also add pumpkin purée to thicken it even more; but it may overwhelm the other ingredients. I just luv pumpkin!

Wow. This stew is so interesting! One bite has a sweetness to it, the next is bright and fresh, the next rich and savory. Full disclosure, I chose to use butternut squash instead of pumpkin and I didn't have any almonds. The fried bread/garlic mix at the end smelled incredible. As always, I love the basic, simple ingredients that amount to so much more than you expect. Thanks, Albert, sorry I'm so late giving this a try! I'm certain I will crave this as the weather cools!
