I am not a baker but I even made La Tarta de Santiago successfully 2 times. Last Sunday I made the gambas con arroz y ajo. And we've just been put into a snap 5 day lockdown because of covid! Oh yay! This is like the Spanish version of guatemalan black beans with rice.. guatemala version tastes so 👍 good. I like learning new things though and this looks so good

I made this yesterday. Very nice. Guests were also impressed. I picked up broad beans rather than kidney beans in mercadona by mistake but not big issue.
Albert as I said this is an impressive recipe. I have looked at the ingredients and I believe a Mexican influenced recipe could be easily constructed. I am designing this with Arborio rice, red peppers, sweetcorn, cooked black beans, tomatoes and cayenne plus other ingredients to produce a typical OAXCAO related dish. You are a brilliant inspiration, long may you prosper.
Thank you so much! I made this for my family's lunch. Used butter beans instead, as I didn't have any other type of beans in my pantry. Also added quarter cup chopped sweet potato, and half cup chopped cauliflower. Used 1 cup of long grain rice as I didn't have arborio rice. 2.5 cups of vegetable stock. The end result was a bit wet, rather like a risotto. But still, it was super tasty! Will definitely make this again (but will use less veg stock to the long-grain rice). Cheers!

1.75 cups liquid to 1 cup rice will give you fluffy long grain rice; 2 cup if you want it very moist.
