    Preserve your favorite fruit in a vanilla bean infused syrup for and upscale version of a classic.
    Anti-browning solution for fruit:
    3 T. Ball Fresh Fruit Preserver
    2 Q. water
    Light Vanilla Bean Syrup
    5 1/4c. water
    2 1/4c. sugar
    2 vanilla beans
    Fruit
    3 lbs. peaches (5-6)
    3 lbs. pears (5-6)
    1 pineapple (1-2lbs)
    1 1/2 lb. green grapes
    1/2 lb. fresh cherries or Maraschino cherries
    Ladle hot fruit into hot pint or quart jars, leaving 1/2" headspace. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process pints 20 minutes or quarts for 25 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    Carol, great recipe. your printed recipe says 1 quart water to 3 tablespoons of ball fruit fresh produce protector and in the video you say 2 quarts water. I looked for the direction on the container of ball fruit fresh produce protector but there is none.

    Are you still comfortable steam canning with the model canner you have? They say that only the one with the dome top is safe. I purchased the one you’re using and like it. What is you opinion on this?

      Yes I’m still comfortable using it. My belief is they changed their stance bc people were trying to convert a stockpot into a steam canner. Here’s the original documentation

    It looks delicious. One of the best parts - more than one Cherry per jar. I am going to try this. Do you get the vanilla beans in bulk? If so where do you recommend.

      Another option. I use vanilla bean powder. I keep it in a mason jar. Just a touch in the pan. Sometimes, I will use a cinnamon stick along with the vanilla. And I can't believe she, and I chose the same fruits. Delish!

    This looks great! So you do t need lemon juice? How long will this store for?

      You do not need lemon juice as the fruit is acidic on its own. It can be stored for 12-18 months

    Oh I have to try this! So white peaches are a no for canning. What about other colors of grapes? I prefer the black grapes. Are they OK to substitute?

      Yes, white flesh peaches are not safe for canning. I’m really not sure about black grapes. I think white/green are what’s recommended.

    This may be a silly question, but is it safe to put the vanilla beans back into your bottle of vanilla extract once you've simmered them in the simple syrup? I do my own vanilla extract so I have a big jug of vodka with twenty or so vanilla beans in it but I don't have any beans that aren't in the jug already. I hate to feel like I'm "wasting" them, ha ha.
