Canning Fruit Cocktail with Fresh in Season Fruit

- Fruit cocktail isn't as popular today as it was years ago but those of us who were raised eating it still enjoy it. We remember the days when the only fruit we ate was what was in season and none of our fruit came from the grocery store. If it wasn't in season then it was in a tin. Here is how you can use fresh fruit in season to can your own Fruit Cocktail.
Fruit Cocktail
8 1/2 cups of diced peeled peaches
6 cups ripe diced peeled pears
2 or 3 cups of diced pineapple
2 cups of pitted halved cherries
2 or 3 cups of seedless grapes cut in half if they are bigger
As I cut the fruit I put it in to the pot I intend to boil it in. I cover it with water and add the juice of a half of lemon to keep the fruit from turning brown. In a separate pot I prepare the syrup. 2 cups of sugar and 4 cups of water but you can use less sugar if you like.
Drain the water off the fruit and add the syrup to the pot with the fruit.
Bring the pot to a boil and then immediately put the hot fruit into hot jars, ladle on the syrup, debubble the jars, wipe the rims, put on the seals and rings. Place it a hot water bath canner. Bring to a full rolling boil and boil for 30 minutes. When the time is up shut the stove off, remove the canner lid and let sit for 5 minutes. Then remove the jars to a towel on your counter for the next 24 hours.

I just got about 7 dozen pint jars and about 3 dozen jars from a cousin. She was cleaning out some that she knew she wouldn’t use. I also get some at yard sales. I check them before I buy them. I can’t wait to can this fruit cocktail. Thank you for sharing.

Hi colleen, so pleased your subscribers are shooting up..you deserve every single one.
Your explanations are very clear and DETAILED. This is very very important and helpful for fledgling canners as mistakes are costly in these hard times. Could you clarify when you use a skewer do you just go round the edges of the can to release air or do you normally jab the middle too, but didn't in this case because it would maybe have broken the fruit up? Or was it just by chance as your eagle eyes saw the bubble villains sneaking by the edges.
BTW I love the way you don't ever panic.you must have nerves of steel....take care lovely lady and I will be watching your cooking skills for a long long time. 😊😊😊

I Usually go all around and in the middle because we don't know where air bubbles are hiding out but I didn't do that with the fruit cocktail because I didn't want to break the fruit anymore than it already was. Thank you Julie, It must be a difference in the areas we live. Our cherries are finished and th leaches are just coming to an end. We don't plant our gardens until after the last frost or about the 24th of May. We can expect frost almost any time now. The snow comes about the end of November and continues until the middle of February. It all starts to melt about the 3 rd week of March. I appreciate you following along. Best wishes, Colleen
Can you tell us ? or show us where you keep your canned efforts? What type of racks or book cases or just the cardboard boxes stacked on each other. I don’t have all of my new boxes the jars came in because I bought a lot of used jars that I found on sale years ago. So storing them is questionable.
I have frozen sweet cherries, blueberries, in my freezer don’t know exactly what to do with them? Want to can to use on homemade yogurt.
I never thought about just using sweet cherries not maraschino cherries which would get watered down through the canning/water bath process. Thank you for this video! It has helped me create a list of fruits to use in my projects this year ‘2024🤗😋

Can you do this with just fruit juice? My 2nd great grandad was the first (known) type one diabetic (had both of his lower legs amputated back in the late 50's) in my family and both sides are riddled with diabetics of both types. I have escaped it so far and would like to keep it that way.
The fruit cocktail looks so pretty but I would have like to have seen the jars after the canning process. Any siphoning?
Hello Judy, I wonder why I didn't show them after. There was no siphoning at all. It is pretty, although the fruit does loose some of its color after its been processed. It tastes so good! My husband loves it on his yogurt or cooked oatmeal. Cheers, Colleen

Hi Nanci, usually fruit floats because its full of air. When we heat the fruit before we put it in the jars the air expands and escapes. Sometimes you will really notice it when there is foam on top thats the air escaping the fruit. Once the air is out the fruit will settle and the chance of floating is reduced. Cheers, Colleen
How long will the frut cocktail last after it's gone through the canning process? About what temps should the canned items be stored in? Living here in the desert it makes it hard to stor it in a cool dry place
Good questions. The fruit cocktail will last up to two years bit I noticed that the color of the fruit starts to fade after the first year and looks less appetizing although the flavor it still great. All canning should be kept in a cool dark area if possible so it doest loose its color. Thanks for watching. Colleen

Where I live we waterbath can quarts for 30 minutes but that can change depending on the altitude. Cheers, Colleen
Does anyone know if there are fruits that cannot be put in the mix? like blackberries or blueberries?
I don't think I would put blackberries or blueberries in because they would color everything else in the jar.

Can you add bananas to your fruit cocktail or will it get too mushy?
It will get mushy! I try to always think whether or not I've seen something canned commercially before I try it and I have never seen bananas canned. Thanks for watching!
