I love the one jar meals. I keep trying to find meals that my truck driver hubby will eat while he's on the road. That way, I know he can have a home cooked meal when he's been away from home for several days. Much healthier for him than the "truck stop" food. He can heat them up in his microwave, or the personal slow cooker.
I don’t have that book, but this sounds like a delicious recipe to have in your pantry. I like that the book offers different meals in a jar. Thank you for showing how to can this recipe.
Since I have this book, I’m going to give this recipe a try. Just happen to have all the ingredients on hand. Will do 4 pints in my Cary/Nesco electric pressure canner. Cooking for one, pint size meals in jars are perfect for me. I have canned your Bourbon Chicken and with some steamed broccoli and rice, I get two meals from each jar. I’m happy to see you join this collaboration, Carol ❤

If you're short jars in a pressure canner to do a minimum load, you can always just add open jars of water. Some people can actual jars of water (if they want sterilized water on their shelves for first aid), but it's not necessary to have the extra jars with lids. They just have to take up the "volume" of space inside.
Sounds tasty. I like meal in a jar, too. So quick and handy. Before I retired I'd bring a jar of home canned stew to work to heat up, everyone was so amazed as they've not heard of canning. I've been canning over 50 years.

I always get baffled a little with chicken. I do raw packing and go the inch and a quarter headspace. Yet, in stuff like this, I see an inch. I guess because of the fact of potatoes taking in the liquid. This looks really interesting, and I can see how you could change up the flavors.
Nice to see you on the collab, Carol. I am surprised that the recipe calls for adding more liquid, but obviously they came out fine! It must be between the potatoes and tomato paste, that the liquid balances out. Yes, I'd love to find more 1 jar meals that lets you mix everything up in a bowl before adding ingredients to a jar. Nice and simple. I think a less sugary version of sweet and sour chicken would be great. Thanks.

I just got this book. I'm so excited about the meals in a jar. I got sick this last year (cold). And I had a couple of meals (mostly soups) and it was so simple to hear and fix. Yum! Thank you!

A pint will serve 1-2 depending on how big of an eater you are and if you’re serving it with something else. The quality will start to deteriorate after about 2 years 😊

Yes, you can add anything you want after opening a jar
