This is a fantastic simple one jar meal from @BallCanning. Chicken Curry is something a little different to add to your home canned pantry.
4 lb boneless chicken, cut into 2" chunks
2 c. finely chopped onion
2 c. finely chopped tomatoes
2 c. peeled and diced potatoes
1 c. raisins
4 t. salt
8 T. chopped fresh cilantro
8 T. tomato paste
2 t. curry powder
2 t. garam masala
Pack combined raw ingredients and seasonings into hot quart or pint jars. Cover raw ingredients with hot broth leaving 1" headspace. Remove air bubbles, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

I love the one jar meals. I keep trying to find meals that my truck driver hubby will eat while he's on the road. That way, I know he can have a home cooked meal when he's been away from home for several days. Much healthier for him than the "truck stop" food. He can heat them up in his microwave, or the personal slow cooker.
It seems like something is always coming up in life. Having meals in jars is an awesome way to save money and not go through the drive thru. Thanks for sharing!

Since I have this book, I’m going to give this recipe a try. Just happen to have all the ingredients on hand. Will do 4 pints in my Cary/Nesco electric pressure canner. Cooking for one, pint size meals in jars are perfect for me. I have canned your Bourbon Chicken and with some steamed broccoli and rice, I get two meals from each jar. Just came home from the market with 17 pounds of chicken breast (on sale!) and was going to can ugly chicken, but this looks really, really good so this first, then back to market for more chicken and will can ugly chicken at end of week! Sounds tasty. I like meal in a jar, too. So quick and handy. Before I retired I'd bring a jar of home canned stew to work to heat up, everyone was so amazed as they've not heard of canning. I've been canning over 50 years.

We have never had curry chicken. I think this sounds delicious however my hubby is hesitant. Thank you for all the wonderful information.
I always get baffled a little with chicken. I do raw packing and go the inch and a quarter headspace. Yet, in stuff like this, I see an inch. I guess because of the fact of potatoes taking in the liquid. This looks really interesting, and I can see how you could change up the flavors.
I liked the format that you chose! I could use a clear canning lid to check boiling progress.

Nice to see you on the collab, Carol. I am surprised that the recipe calls for adding more liquid, but obviously they came out fine! It must be between the potatoes and tomato paste, that the liquid balances out. Yes, I'd love to find more 1 jar meals that lets you mix everything up in a bowl before adding ingredients to a jar. Nice and simple. I think a less sugary version of sweet and sour chicken would be great. Thanks.

Is the 1 pint jar equivalent to one normal serving? And how long will this pressure canned chicken recipe stay safe when stored? Cheers, Ray.
A pint will serve 1-2 depending on how big of an eater you are and if you’re serving it with something else. The quality will start to deteriorate after about 2 years 😊

Yes, you can add anything you want after opening a jar

Yes, beans are processed the same amount of time as chicken. Just make sure to properly rehydrate them from a dried state before canning
