Canning Pasta Sauce ~ End of Summer Pasta Sauce ~ Home Canned Pasta Sauce Using Frozen Tomatoes

    This out-of-the-ordinary pasta sauce is an excellent way to enjoy your summer veggies. Packed with summer veggies, savory spices and wine, it makes a great sauce for more than just pasta. Use it as a base for a vegetable soup or stew, braise meat or elevate your favorite pasta. This is one of my favorites!
    3 1/2 lbs. tomatoes, cored and chopped (I used defrosted frozen tomatoes)
    1 1 lb. eggplant
    4 sprigs of thyme (I used dried instead)
    1-2 bay leaves
    6 T. olive oil, divided
    2 t. salt
    1 1/2 c. chopped onion
    2 large carrots, sliced
    2 large bell peppers, chopped
    2 c. dry wine, white or red
    2 c. cauliflower florets (I omitted)
    2 c. coarsely chopped green beans
    1/2 c. loosely packed basil leaves, chopped (optional, I omitted and used dried instead)
    1 c. fresh corn kernels
    1 t. ground black pepper
    Other suggested dried spices
    1-2 T. ea basil, oregano, parsley flakes, thyme, bay leaves
    Ladle hot sauce into hot pint or quart jars leaving 1" headspace. Remove air bubbles, wipe rims, center lid and add rings to fingertip tight.
    Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15
    This recipe CANNOT be safely water bath or steam canned.
    Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

    I'd prefer shredded zucchini to corn. Yeah, I'm with you on leaving cauliflower out. I want foods my family with children will eat. I love the wine addition as well as the fresh basil option.

    Perusing my canning cookbooks, I came across the same recipe and was very hesitant but after watching your video, I will be making it and omitting the cauliflower also. When my kids’ were young, I’d add puréed roasted eggplant and red bell pepper to my homemade sauce for added vitamins without them knowing. Great video!

    Girl! This is a great video for so many reasons. Tfs the trusted way to use up the garden veggies. The suggestion for base for hamburger soup is awesome too. This is just what I like to eat in the fall/winter months. (I’m in southwest Ohio-go Buckeyes!) You do a fabulous job of teaching, illustrating, and sticking to the points.

    I like this thicker sauce! I think i will have to give this a try. I am actually going to do your Vanilla Bean Applesauce a try this weekend.

    We just canned 23 qts of our garden tom. salsa, and 32 qts of various jelly and jam

    Hi Carol, Question: Can I sterilize my jars in the dishwasher? If so, do I add detergent or not? Plz let me know I am going to dehydrate fruits & store them into jars & air seal them. I love your channel. God bless & TIA.

    Carol you use your All American canner on a glass top stove? I have the biggest made All American canner & I am afraid the glass top will blow up. What do u think about that? TIA

    I am curious about seeing that you can in an All American on a glass top range. I was lucky enough to acquire an All American 921 canner at an estate sale (almost new and only $15). Upon reading the manual it states not to use it on a glass top range. What are your thoughts on this because you are obviously successfully doing it?

      Well mine is a 915 so it’s smaller than the 921 so I’m not sure if that matters. Whirlpool states it’s ok as long as the bottom is flat. Here’s where I got the information
