Chocolate-Cherry Jam ~ Valentine's Day Canning and Gifting ~ Homemade Jam

Say I love you by gifting this luscious decadent jam. Nothing better than chocolate paired with cherries for Valentine's Day.
6 c. frozen or fresh cherries, dark sweet or tart red, coarsely chopped
6 T. pectin
1/4 c. bottled lemon juice
6 c. sugar
2/3 unsweetened cocoa
Ladle hot jam into hot half pint jelly jars, leaving 1/4" headspace. Debubble. Wipe jar rim. Center lid and apply band to fingertip tight.
Process 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

I made this for Christmas gifts. It's so yummy on ice cream.
I made this jam recently. I was way beyond good. I found out that Walmart has these dark sweet cherries, and to make the 6 cups it takes two bags of cherries. I put them in half pint jars, but I had a little left over. The left over was put into a 4 oz. jar which was perfect for just two people. That is if you are not living on that delicious jam. I made it also with the regular pectin (one box of Sure Jell), because my husband does not like the low sugar pectin. This is a chocolate lovers treat!

Hi carol, I’ve made this, but used Pomonas Pectin. It came out thick but we zapped it a few seconds in the microwave and used this on ice cream!

I have made this one before, usually buy cherries cheap in summer and freeze to make jams in the cooler winter months but unfortunately we lost power during a storm and the fruit thawed out, all the fruits I had thawed out, so no jam making for me.

Yes, sure gel is pectin. That’s actually what I used bc I couldn’t find Ball brand 😉
Can I use citric acid instead of lemon juice?

@@carol-thriftychichousewife6231I certainly understand your answer. And yes it's always better to go strictly (for the most part) by the recipe. But I have had this same question before. And according to Pamona Pectin q&a their reply was: "Citric Acid can be substituted - it will adjust the acidity (lower the pH) of the fruit, which is what you want to do. ¼ teaspoon powdered Citric Acid is equivalent to 1 Tablespoon lemon juice. 1 teaspoon powdered Citric Acid is equivalent to ¼ cup lemon juice (4 Tablespoons)."

@@jimjordan5630 I’m aware you can swap citric acid for lemon juice in canning recipes but I have never heard of doing it for jam. And I don’t claim to know everything about canning so if pamona says you can it’s worth trying.
I have it cooling on the counter now and I have to say I am a little disappointed. I love chocolate but cherries are my passion and the chocolate overpowers the cherries.
It could be the cherries. The batch I made was very balanced in flavor but I used red tart cherries instead of black sweet cherries
