Crockpot Barbacoa ~ Mexican Cuisine ~ Cinco de Mayo

    In this video I show you how to make your own homemade Barbacoa seasoning sauce/marinade. This recipe makes enough for 8lbs. of chuck roast. I use 1/4 of the recipe for every 2lbs. of meat, freezing the leftovers in individual containers for later use.
    For the batch of sauce/marinade you will need:
    1 can of chilies in adobo
    1 6 oz. can tomato paste
    3/4 c. fresh squeezed lime juice
    1/4 c. apple cider vinegar
    5 cloves of garlic (or 1T. garlic powder)
    3 T. ground cumin
    1 T. Mexican oregano
    1T. salt
    1 T. pepper
    1 T. onion powder
    1/2 T. smoked paprika
    1/4 t. ground cloves
    1-2 bay leaves (added at the time of cooking)
    Puree in a blender until smooth. Add 1/4 of the recipe to crockpot for every 2lbs. of chuck roast. Store leftover sauce/marinade in freezer containers in equal amounts for later use. The recipe as written is a medium heat. If you want more heat you can add additional spices such as cayenne pepper or Tobasco to the sauce. Alternately, you can use more sauce when cooking.

    Looks amazing Carol. Thank you for the recipe. I too love the challenge of figuring out a spice mix for cooking. I have a niece who has a bbq sauce that she will not disclose the recipe. I do not understand this!! I always end up figuring it out no problem it is the point of it all. Some people too will leave out one ingredient?? I would love to make this recipe with a pork butt roast. Cheers

    In the video, it looks like the sauce is in the crockpot, but then you say you added the sauce at the end. Should you put some in the crockpot or just at the end?

      Sorry that seemed confusing… yes you cook it in the sauce but after I shredded the meat when it was finished cooking I poured the sauce it was cooked in over the meat for serving if that makes sense
