I aim for 1/2 plate to be vegetables, 1/4 protein and 1/4 carbs for a balanced meal, and like to keep both raw and easy-to-cook or precooked options to make meal prepping easier.     Love your videos!! Very helpful.
    So I was going to make enchiladas using black beans and corn. Are soft corn tortillas okay? Was wondering which tortillas to use also was thinking of maybe adding canned chicken and throwing in some spinach 🤔 just to add more vegetables from tips you said in past.
    Would this be healthy? Using red enchilada sauce. Maybe some cheese on top.🤔

      That sounds like a delicious healthy meal! Corn tortillas are a great choice and adding in black beans and canned chicken for protein, and corn and spinach for veggies is an excellent idea! And of course you can't go wrong with some cheese on top 😋 I'd suggest a small side salad or a piece of fruit on the side to round out the whole plate 😊👍
