For those of you who don't have the time in the morning to cook, you can meal prep some of those and heat them up in the morning. :) You can also make overnight oats or chia pudding the night before. Other easy options are pb sandwich or hummus sandwich and smoothies. Some people also do intermittent fasting, personally it's not my thing, although I do eat later in the morning (11-12) especially when I was going to the gym in the morning I would just eat a banana or sth and skip to lunch lol. (Intermittent fasting doesn't have to mean that you eat less, you just boost up the other meals calorie wise. :))
I definitely would have swapped the coconut oil for a much healthier oil... because it's high in saturated fat... Maybe swap the vegan butter for Avocado oil and coconut aminos instead of soy sauce.. .. but that is just me.

For people just starting out on a plant based diet your breakfast recipes dont have to be this complicated. Substitute fruit smoothies and giant fruit bowls for breakfast instead of these fatty recipes. They're a lot more satisfying, satiating, and healthier.
Trust me, it will taste like eggs! I personally have tried many recipes and believe the EdgyVeg's is the most authentic, so you may wanna try that out too.
Tips for the smoothies : freeze the fruits. Don't put ice. It tasted better.

Chickpea flour: if you have a coffee grinder you can grind 1/4 cup at a time. Sift. And grind the excess bits. You don’t lose out and waste

it matters if you're deep frying but nothing here was deep fried. simply sauteeing in olive oil is quite fine

Microwaving that tofu for scrambled tofu was an unnecessary step. Just break the tofu up and put it in the skillet. Simple.

Tofu by definition has soy but I have seen hemp "tofu" recently. Didn't check ingredients in detail but I think it's no soy.

Prefreeze tofu, defrost and cut it up. Squeezes out twice as much liquid.
There is no need to use OIL on a new nonstick pan. Food will taste better without any oil at all.
