Been a vegetarian for over a year now. And I’m excited to finally go vegan. I lost a lot of weight as a vegetarian and I think that my overall health got better. I can not wait to reap the benefits of being vegans.

@@mayabarnes5973 Honestly, don't be. You won't gain or lose weight on a vegan or vegetarian diet if you are substituting meat/dairy/eggs with things that are roughly the same. If you replace your omelette with a tofu scramble that's the same calories you won't lose weight. If you sub your meat for fake meat or tofu/seitan dressed up you won't lose weight. People often lose weight on vegan/vegetarian diets because their wish to change is tied to concerns about their health and the quality of their food, and they end up making a lot of other adjustments at the same time - these other adjustments (whole foods, more veg, raw, whatever it may be) are the main reason they lose weight. You can gain weight very easily on a vegan diet if you are eating more calorie rich foods, or if you're a 'junk food vegan' who eats a vegan version of the standard American diet. Like any other diet, vegan/vegetarian diets are not exempt from the laws of thermodynamics. I went vegetarian and lost no weight. Years later I went vegan and lost about 3 pounds BUT I also switched to whole foods AND calorie counting AND heavy exercise at the same time, in no way can I contribute that weight loss (which was still very small) to veganism alone. If you want to gain weight on a vegan diet, you would just need to do the same things you'd need to do now to gain weight, except without animal products.
It was eye opening to me one day when I read the ingredients in vegan protein powder. It's basically pea powder. In our country, we use split pea and chick pea powder on a regular and so instead of spending a lot of money on protein powder, I would just get the regular pea powder and keep it on hand.
I used to make smoothies all the time, I've got to get back into that. I'm really interested in trying these recipes. The scrambled tofu enchiladas you came out with several years ago is one of the best dishes I've ever tasted. I made the tortillas myself, so it was especially good.
These look great! I didn't know about "chewing" your smoothie to help with its digestion. It makes sense as often I feel bloated for a long period after having a smoothie. It's a great tip that I'll be incorporating into my eating regime.

We eat breakfast for dinner a lot we do southern fried apple biscuits and sausage gravy , I have made tofu crumble sausage, tvp or get lazy with beyond , oatmeal pancakes and tofu scrambled I will try that omelet and your sweet potatoes burrito I love sweet potatoes 🍠

I love your videos as I continue on my plant based journey! What type of cookware are you using here? I'm on the hunt for great nonstick healthy cookware. I also love that you add the amount of protein on screen for each of these recipes. I have been hearing so much talk about, or rather against, the quality of plant-based protein as compared to animal sources over the last few weeks. There's just so much noise around the topic of protein that it can be confusing to know what is best for each individual. I'm moving closer toward a fully plant-based diet but it seems like every other article, book, podcast is talking about animal sources being better quality protein. I'm going to continue down my plant-based path and videos like yours help to support my choice. Thank you!
I'm using Caraway here. They are great. I also see a lot of high quality (and less expensive) ones at Home Goods. Like Green Pan. Exactly! So much talk about plant based protein being inferior, but I haven't seen the evidence. On the contrary, accepted science points to the fact that it is just as good as meat based, but has the added benefit of fiber and phytonutrients. As a 13 year vegan, and someone who has never eaten any red meat, I call BS. I think it is more related to people's desire to continue eating meat. The experts who celebrate animal protein ONLY recommend eating grass fed, hormone free, "clean" as possible animals. However, they confuse normal americans who only have access/budget for toxic meat sold at regular stores. Stick to plant-based and avoid the highly processed foods of all kinds and you will thrive. Good luck!!
There are also ways to combining plant-based foods to make the protein "complete". Rice and beans is a great example of this. I believe quinoa is also a complete protein. I'm definitely never worried about getting enough protein and love the benefits of extra fiber. Fiber isn't given enough credit, especially by meat lovers.

Thanks! The pancakes look delish. I'm going to try them with avocado oil spray, instead of vegan butter. Also, that's really clever to whip aqua faba and fold the tofu batter into it! And the smoothie looks good, too. I like to dehydrate spinach in my oven and make powder from it, because I find that it blends better in smoothies. Also, I agree that beans can be great in smoothies and I use them all-the-time. My faves are white and black beans, depending on what else I'm using, because they are more neutral in flavor and can give the smoothie a lovely creamy texture. I also use tofu, when I want more protein and less carbs. And soy milk is my go-to for the liquid, though it can tone down the flavor. BTW, if you find that your smoothie is a bit too bland, with all of the other ingredients, and you need a bit of tartness, you can use a touch of apple cider vinegar to give it a little kick. I usually keep it to around a teaspoon. Anyway, thanks for making this and sharing your recipes with us. Blessings! - Claire

Soak the chickpeas overnight, then cook them in the same liquid for the right texture of aquafaba. You can try mixing by hand with a fork, but for this recipe you need it completely foamy so it might take a really long time.

I see that tofu is used in the recipes. Is the tofu a problem for men? I’ve heard that soy has an amount of estrogen and possibly can affect men negatively.

Yes! I buy chickpea flour in bulk and it's pretty cheap, great protein, good taste!

Cream of tartar will make the aqua fava peak. It's used in egg whites also to make meringue

I used frozen blueberries. I often do frozen spinach too, but had a ton of fresh the day I filmed this.

I use the flaxseed as an egg substitute/binder, so other good options would be applesauce, chia seeds, banana, or even just Bob's Red Mill substitute!

The total protein is per recipe or per serving? It looks like the recipe makes a few servings with the exception of the smoothie so I wasn’t sure.
