    To save having to turn the courgettes over to salt the other side, put salt on the cutting board, or surface, sprinkle salt on the surface .Then put the courgette slices on the salt, rubbing them into the salt as you do. Then salt the top side. Done, time saved.

      Yes, I'm a big fan of seasoning the cutting board before putting down the food, especially meat. I believe one of the famous chefs recommends this on his shows. Gordon Ramsay? Much less waste & better adherence.

    Just made this dish about 15 minutes ago. Holy cow!!!! The texture of the zucchini is to die for! My fried zucchini is usually oily and mushy. This one is almost crunchy! Plus that garlicky topping, yum!!! That’s it, I found my go-to recipe! Thank you!!!!❤

    This is serious he best zucchini I’ve ever tasted. I just made this for a quick dinner as I had a ton of it. I usually hate how soggy it come out. But once again your simple salting technique with a little fresh garlic and herbs did the trick. Thanks! I’ll be making this again.

      Liquids are measured in liters (ml), solids are measured in grams (kg), distance is measured in meters (km).
      Channels measuring liquids in grams are actually doing it wrong.
      Money is in metric system (ten pennies=dime), ten dimes=dollar, ten dollars=ten dollar bill, ten ten dollar bills=100 dollar bill.
      Water freezes at 0°, boils at 100°

    We are camping so no frying pan. Cut these length wise and made zucchini steaks & followed the yummie yum yum garlic parsley sauce and it was off the hook! Just another way to cook this lovely recipe.Thanks for this recipe,it's a keeper for sure!!!

    This is exactly what I was looking for. Most other zucchini recipes require large amounts of cheese and/or cream and many other ingredients. I was looking for something light and fresh and flavourful without all the fatty extras. Thanks for this. Cheers!

      I use chopped walnuts instead of pine nuts in my pestos. Can’t tell. Much healthier nut.

      @@aaronaardvark1361 your right. Also chopping pine nuts would be hard to do. But the pine nuts I buy from Costco have no skin on them. So it is a case, in my opinion, of health vs taste.

      @@SpainonaFork I did the salt to draw the moisture and it worked, then I rinse the salt off! Unfortunately it was still too salty after I cooked them!! Perhaps I used to much salt and it drank it up? I really did use a crazy amount of salt!!

    I might add a few drops of olive oil to the parsley garlic mix and the add a splash of red wine vinegar...sounds divine

      Well, the parsley and garlic mixture is lightly sauteéd in the same pan as the one used for frying the zucchini...which had sufficient olive oil for my taste. I opted for wedges of lemon to garnish as well.

    I love zucchini! It's moist and has a delicate sweetness and minimal calories, and with some oil and aromatics and a bit of technique it can be really delicious while still being very healthy.
    I think much of the hate people have for vegetables is because they don't know how to cook them in North America in a way that makes them palatable. It's either that they're boiled to death and unseasoned and people grow up hating veggies for that, or the veggies are served battered and deep-fried 🙄

      I grew up loving vegetables, cuz they came straight from the garden. Ultra-fresh veggies are I was born in 1940, before all the GMOs, herbicides, herbs & spices, etc., were well known, & at 81 I still love thinly sliced, steamed organic zucchini with only butter, salt & pepper. Same for snow peas, green beans, corn-on-the-cob…. Doesn't mean I don't also like veggies prepared differently, which is why I'm here!
      And don't forget, Mexico is in North America! If you mean the US &/or Canada, say so.

    Mmmmmm just made this it's amazing! I decided to cook some crushed tomatoes olive oil and cayenne separately and added it at the end to eat with. So delicious I wish I made more 😅

    I remember having this in Barcelona when I was touring museums there. It was a street food. I also had street food pickles that were the most fantastic thing I had in all of Spain.

      @@patriciarmuller6283 Oh sure. It's a family recipe. we used to have it with either cornbread or fry bread and a meatloaf dish called rumble thunder. Here ya go.
      Three sisters Stir fry
      1 tblsp Butter
      1 tps ground sage
      ½ cup thin sliced onion or white part of spring onions
      2 yellow squash, thin sliced into half moons
      1 cup cooked or canned pinto beans
      ½ to 1 cup canned cream style corn
      1 cup frozen corn kernels, thawed
      salt and pepper to taste
      Garnish with 2 to 3 tblsp chopped green chilies and/or chopped pimento
      1. In large nonstick skillet, melt butter over medium heat. Add sage and onion and stir and cook for 2 to 3 mins.
      2. Add , squash , beans, creamed corn, corn kernels; Cook, stirring often, until squash is tender and mixture is heated through, about 10 minutes. Season with salt and pepper to taste then transfer mixture to large bowl, garnish with green chilies or pimento;
      Let me know if you like. Enjoy.

      @@40bpaula I use my mom's recipe for yellow squash. Fry some bacon in your pan. I like mine crispy. While bacon is cooking, cut up your squash into thin slices. After bacon is done, remove from pan onto paper towels on a plate. Put sliced squash into hot pan. Then slice and dice up some sweet yellow onion, toss into pan with squash. Stir then add a lot of black pepper. Stir again. When squash and onions have stewed down to where they are done, add your cooked bacon and stir. After bacon is hot again, serve and enjoy. 😁

    Omg my grams made this when I was a kid! It was the only way she'd get me to eat a green vegetable!! (Those she'd also top the zucchini with fresh grated manchego or parmesan. Definitely make this tonight.

    I live in the united states, and in my area we are now past the final frost. After watching this video, I'm going right out and plant zucchini and yellow squash. What a delicious sounding recipe.       When we had organic zuc and squash, we had problems with squash bugs (NOT with the zuc) that we decided to just buy our squash after a few years of losing the fight. 🤣

    Omg, thank you; I live in NZ and we can only find tiny zucchini in shops, just a little bigger than a decent bean; so I decided to grow my own; but now I'm flooded 😂 this is a recipe I'll definitely make 😍

      Been there lol. Zucchini slice is good. Uses a lot of eggs and cheese, but freezes really well so you can do big batches and catch up a bit. I wouldn’t bother with the hidden zucchini chocolate cake recipes. Well, unless you really really like cake. I tried it. It tasted pretty good, and actually it froze well too, but it only used up one smallish zucchini which wasn’t what I was trying to achieve. I can see why mums like it, because you truly could not spot any zucchini in the finished cake, but in the middle of the great zucchini inundation it was a waste of time. I haven’t tried a zucchini bread as yet. I probably will next time I grow them. It looks pretty decent and apparently freezes well too.

      Georgeta Pirlea, I live in Southern Spain but am originally from the States, and Zucchini Bread is very popular there, especially if you have lots of zucchini. It is actually a cake that yields two loaves.
      3 eggs
      2 cups white sugar
      1 cup vegetable oil
      1 tablespoon vanilla extract
      2 cups grated zucchini
      2 cups all-purpose flour
      1 teaspoon baking soda
      ¼ teaspoon baking powder
      1 teaspoon salt
      ½ cup chopped walnuts (Optional)
      Preheat an oven to 350 degrees F (175 degrees C). Prepare 2 8x4-inch loaf pans with cooking spray.
      Beat the eggs in a mixing bowl with an electric mixer until frothy. Slowly add the sugar while continually beating. Stir the vegetable oil and vanilla into the egg mixture; continue beating until the mixture is thick. Add the zucchini to the mixture and stir.
      Mix the flour, baking soda, baking powder, and salt together in a separate bowl; pour into the wet mixture and stir until just combined. Add the chopped walnuts and stir. Divide the batter between the two prepared loaf pans.
      Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. (Check after 45 minutes in case your oven is hotter than most). Cool in the pans for 10 minutes before loosening the edges with a knife and removing to cool completely on a wire rack. Just FYI, you can used frozen grated zucchini that is thawed. Works perfectly.

    Seasoning the board first would save a time consuming step, just a suggestion. Best time saver is to place the vegetables in a bag with seasoning and shake for even distribution. Everything seasoned at one time.

    I’m gonna tuck this simple, yet tasty looking zucchini recipe for summer. I’m still getting over having waaaay too many zucchini’s growing in my garden. I was running out of different ways to prepare them. This recipe looks so good that I’m actually starting to look forward to them again.

      @@looloo4029 I haven’t tried that yet. I’ve got really limited freezer space at this time but would like to get a deep freezer in the future. I’ll try that method when I have more room to store them. Thanks

    Great dish. I wash the salted zucchini after they drain to get rid of all that salt, and then pat dry. The slices won,t reabsorb the water,

      I made this yesterday and although it was lovely, I did find the courgette quite salty for me (to be fair, I do have a very low salt diet) - I will follow your advice and rinse the courgettes next time too. I love this YT channel, have found so many great recipes here!

    To flip almost any solid food, large or small, I use a 12" pigtail food flipper as it keeps my hands far from the splattering oil. It's also great to extract pickles, olives, peppers, etc. from a jar. It's great to extract small slices of toast from the toaster too. I have even used the pigtail flipper to flip a whole roaster. It's now one of my most used kitchen and grill utensils.

    Looks tremendous, I’ve been making this particular zucchini for about the last 40 years. At the end I put Parmesan cheese on it when I bring it out. Also cook it with some onions in the pan sprinkle basil garlic and salt on it. Thanks for giving this video though
