One childhood dish was tamale pie. Like a casserole it had a meatish base and bell peppers and then a cornbread top . Also another was a casserole and it had a rice layer and meatish layer and then mexicorn topping with tomato base more Italian flavors. And my mom made chinease chicken salad so I am yet to make a vegan version of that for 30 years now I better get creative huh! Your family is inspiring me
I love soup, but my comfy dish is cottage pie. made with brown lentils, mushrooms carrots, with a rich sauce and the mash I use sweet potato and broccoli, then leave in the oven until the top goes crispy. ❤

@@thehaipath lentil, veggie and Japanese sweet potato is my fave right now…the Japanese sweet potato adds this sweetness to the soup….I also sometimes make soups with whatever veggies I have left in the fridge 🙂 I try not to waste food! You have a beautiful family by the way…thanks for sharing your meal inspirations

I love bok choy! It’s one of my favorite vegetables. I do a lot of mixed veggies like you do. The other day I made mixed greens with cremini mushrooms, green beans and red onion in olive oil with a little liquid aminos, lots of garlic and ginger. Delicious! Served it over a seven grain blend.
