Ingredients
* 1 block firm or extra-firm tofu drained
* 1/2 teaspoon onion powder
* 1/2 teaspoon garlic powder
* 1 tablespoon nutritional yeast
* 1/2 small white onion diced
* 1 cup fresh spinach
* 1/2 cup diced bell peppers
* black salt kala namak, to taste
* 1/4 cup vegan cheese shreds optional
Instructions
* In a nonstick skillet over medium-high heat, sauté onion in a bit of oil or water for 2-3 minutes. Toss in bell peppers and sauté for another minute or so.
* Crumble tofu into pan. Stir in onion and garlic powder and nutritional yeast. Pan-fry, stirring often, until excess water has cooked out of the tofu.
* Stir in fresh spinach and cook until just wilted. Sprinkle on optional vegan cheese, reduce heat to low and allow to melt.
* Top with black salt and pepper to taste. (I prefer adding black salt at the end because it retains more of its unique "eggy" smell when it isn't cooked.)

I’m sorry it didn’t work out with Melvin, but happy to hear he’s doing well! As a side note, make sure you reach out to the rescue where he was adopted from to let them know he’s elsewhere. They’ll be able to update his records and hopefully transfer ownership. A lot of rescues make you sign a contract stating you won’t rehome or you’ll be fined/blacklisted, so usually the best route to take is to contact them directly and explain the circumstance. His microchip will need to be updated, too!

Do you put the heat in your house so high or is winter so warm where you live? Im always surprised when I see people in tshirts or short tank tops in winter while im here wearing a big sweater. And I know it depends on where you live but a few vids ago there was still snow!
I’m sad for you both that you had to rehome Melvin. I have 2 standard poodles, one we got as a puppy, one came to us as a rehome at 1yr old. They are keeping me sane right now in this safer at home crap. I take them to the park for an hour a day. They play with 2 other dog friends and then sleep the rest of the day. I’m thrilled that we found our rehomed boy on Facebook. His previous family didn’t hVe time for him, so he had some behaviors. He’s a different dog now, 2 yrs later. Today, our town closed some parks because ppl were not listening to the orders. They will be great walking buddies for me too.
i think i've only left my house twice in the last week because my job is closed indefinitely:/ social distancing is HARD because i'm used to going where i want and doing what i want. i'm glad your vids are here to keep me company!
Excellent social distancing video. Keep up with the content Sarah. Keep safe and well and especially Eric because he's vulnerable due to his 💓 problems. I am practicing social distancing when I am outside even crossing the road if I see someone on the same side of the road that I am on because I am not in the vulnerable categories but I am helping someone who is and I am practicing social distancing when helping them.

That scramble is exactly what I made for dinner and coincidentally, for the first time, I did chop my spinach that exact same way. The hash browns look delicious!

I never mind your videos being long, I always binge watch regardless 😉 We are definitely twin souls in many way, including the copious amounts of sauce on and with our pizza.
Ok two important take aways- being a good home cook it VITAL. I can barely put together decent meals as is and now it’s proving to be really a point of contention with the groceries stores being picked so bare. ( I’m in NY and we are getting wrecked rn )
I watch usually bc you’re so soothing but now these grocery hauls and meals are necessary tools.
Second and honestly most important find you someone who is as obsessed with you as Eric is Sarah. This just proves it exists and don’t compromise! Y’all deserve better ( me @ me ) Honestly thank you the positivity you are bringing.. little bit of solace.
Sarah, you should premix your spices for the tofu scramble so you don't have to get everything out each time. Just mix a large batch in a jar and use it when you make scramble!

So funny I was very interested in the name mayocoba when you mentioned the beans and thought they looked very familiar, and its because they are from Perú and we eat them all the time but we call them "frejol canario" I used to kind of hate them when I was little because my grandma would make a huge pot for the family and we would have to eat it for 2-3 days in a row. I never knew they were also called mayocoba, I had to look it up on google! When I went to the US I saw them bagged in a latino market and they were called "Frijol Peruano" which I thought was hilarious, because I thought all Latin American countries ate them.

okay but imagine making a really thin and crispy cauliflower hash brown and using it like a taco to make a lil breakfast taco with tofu scramble, avocado, vegan ground idk
I watched your videos out of order. Since you have all those soy curls now, make buffalo chicken out of soy curls as a pizza topping! It's yum. I rehydrate the curls in veggie chick'n stock and then squeeze and brown in a cast iron pan. Then soak in buffalo sauce and put on your pie.

Make a buffalo chicken pizza with a ranch and franks buffalo sauce base, the daiya mozarella, and the daiya blue cheese for dipping with morning star farms buffalo chicken wings. I've also done it with that base and then a buffalo cauliflower kale/romaine caesar on top of the pizza using cafe gratitude's caesar recipe

You can find it at Whole Foods or Sprouts near the protein powders and vitamins. Also at Sprouts, if you have one near you, they have it in the bulk bins as well so you can fill your own container or bag :)

I use ketchup on my homemade pizzas instead of pasta sauce. You and your b/f are so cute. His short hair suits him well. I truly enjoy your vegan recipes along with Ellen fisher. I don't know-how you can keep that figure and eat the way you eat.
