Just wanted to leave a tip, for a quick way to blanch the basil.... you can actually do it in the same salted water as the pasta. Just don't leave it in there for long... it's supposed to be dipped/submerged in the water for a few moments to wilt them ever so slightly.... but not make them limp like boiled spinach. Also, you'd be working in a window of time, before the pasta itself gets enough time to release it's starch into the water. I recommend tying the basil together at the stems with some twine, or just use tongs to hold them in place as you dunk them. You can also use a stainless steel spider strainer/skimmer to collect the basil, which I also recommend, so it'll let the water drain out from the basil much faster.
imo since basil is one of the more fragile herb leaves/MOST prone to quickly becoming "spinach like mushy" even if dipped in boiling water for a second or two... just the ladle of pasta water at the end is more than enough to slightly soften and brighten the basil too, without risk of overcooking it :) this is why basil also requires different storage than a lot of other leafy herbs to keep it crisp, it has very fragile leaves and can't store much water efficiently so it's super prone to destruction basically, even from a quick dip

The best 10 minutes pasta to do is as we call it in Italy "The midnight's spaghetti" which is garlic, olive oil and chili pepper, it literally just takes the pasta boiling time to prepare!

In my opinion, I love the restrictions because it allows for on the fly creativity in dialogue as well as the cooking process. You have to be very particular how you do things and the added pressure of time makes the chaotic energy go through the roof and then magic happens via impromptu. The next thing I'd like to see is an ingredient. Specifically chicken breast. The best chicken breast recipe in 10 minutes.

Yes, THIS! Even worse this time. Most pasta shapes take longer than 10 minutes to cook properly, Sean ran into this right out of the gate. I understand not allowing 'cook all day' kinds of dishes, but the artificially low time limits are annoying and unnecessary.

Out of these three, I would choose Inga's. I love a good pesto. Though I do make something similar to Sean's pasta myself! I usually use a cured/dried meat,like salami/meat sticks? And some onion, garlic, olive oil and if I have it, parmesan and parsley. So good.

Eh, to each their own. I really enjoyed how the time limit made for different decisions and certain things to happen which I feel added to the video. The time limit in the sandwich episode did feel a bit short but this one I thought was pretty good. Maybe 2 extra minutes couldve been better but it was pretty good imo.

I made pasta by hand the other day for the first time and it was great :D. I also used tomatoes I grew in my backyard to make a sauce. Kneading dough and rolling it out by hand is a pain.

Next episode.... judge each other's homemade pizzas (just use whatever oven you got). Make the pizza dough in advance though..... that would be the only concession. BUT... you could also opt to buy the pizza dough from your local pizzeria. So, all you need to worry about is your choice of toppings.
