there's actual science as to why Steven may have been the only one to quickly taste sweetness from the plain rice. Its dependant on how much amylase enzyme is in our saliva to break down the carbs.

Thanks for mentioning that. The guy they were dining with kind of annoyed me when he questioned what Steven was tasting. He just seemed a little arrogant, when in fact, perhaps Steven has a more sensitive palate.
Steven is right when he says rice is naturally sweet, enzymes like amylase break down starch in the rice which becomes sugar
Yes, and different type of rice has a different taste and level of sweetness, which is why I can eat rice on its own, or lightly flavored with sauce and nothing else. Maybe the other two didn't produce enough saliva to break down the starch or didn't chew long enough for the enzyme to work or were not good at picking up the subtle sweetness.
as a rice eater, Steven's taste buds are more attuned to the subtle favors of rice. it's not broken, it's highly developed.

Feels like they have focused the RICE of East Asia in the episode, justified since lots of places in America which offer rice dishes are with East Asia backgrounds. But South Asian countries like Sri Lanka, India, South East Asian countries like Singapore, Malaysia, Thailand offers very different RICE dishes. They can do a whole season about rice and won't be able to cover half of everything 😃
There is just such a huge variety of rice dishes from Europe to East Asia to west Asia to Latin America I’m sure they just decided to stick with dishes that would be more well known to their audience
Even in West Asia and East Europe. There are rice dishes from there, too.
not only that, in latin america we also have tons of rice dishes like Arroz con leche just as example (most of us eat it every single day), so you can add those to the mix.
with 40,000 varieties of JUST the grain, of course! Wish we could see more rice dishes and not just high-end experiments, it looked delicious but rice is such an important food they really should have more episodes about it
And the fact that Steven is of Malaysian heritage just made this ever more disappointing. As a Malaysian, I was rooting for a Malaysian dish

Steven, you are absolutely right when you said, "Oh rice is naturally sweet", as you had the first bite of Onigiri. Good rice (at least if it is good Japanese rice for an Onigiri) should taste 'sweet' which is a compliment for any rice (of course it shouldn't be due to the added sugar, like rice pudding, but naturally.)

In Indonesia some people said that if you eat something without rice, it doesn't count as a meal. In Indonesia we eat almost everything with rice. Noodle with rice, sausage with rice, soup with rice etc. That's sucks. But fortunately my parents sometimes would let me eat only cereal or pancake or pizza.
But I bet that sucks after a while. I was raised with the “mentality” that you cannot eat the same side dish two days in a row (it’s not healthy). Really props to you. Always some dishes you wrote (noodle with rice, soup with rice) sound really weird to me 😂 Probably taste better than they sound haha

This was the most interesting episode ever, I truly loved it 💜
They're REALLY good at describing food. Like when they first started the show they treated themselves more as just some guys who liked eating food, but throughout the show it's seemed like they got better and better at describing flavors and textures and their reactions to the food. That moment when Steven said he felt like his limbs were loosening as he ate the risotto was super impressive.
I really enjoy the adjectives Andrew uses. Also his comparisons and similes about the dishes are usually so descriptive and helpful.

Actually, if you chew rice long enough, it will get sweet. Something about our enzymes making the carbohydrate into glucose.

You are correct. You can tell this by eating a saltine cracker for a minute. We did this for my nutrition class in highschool
this happens with any food with starch as it is broken down by your salivary amylase to form maltose which is a sugar
