When you pull the skin off it changes the color.Also different cat fish have different color meat under the skin.This cat fish was harvested when the water was cold for some reason that makes them white too. I've been catching and eating catfish for over 40 years,so i know what i'm talking about.

Wow that looks delicious. I had this a few times at my Viet friend's house. He used catfish once and the other time he used a Striped Bass. Both were very good. I need to make this asap cause I am craving for it. Lol. Yeah I don't like my fish looking back at me with the mouth wide open too. Haha
Just a thought but u really should get a tripod stand so that you don't have to cook with just one hand and hold the camera with the other. Sometimes it gets a little dizzy with all the moving around. Lol love all your recipes!
