1 cup rice flour
1 cup tapioca starch
2 cups room temperature water
2 cups boiling water
1/4 tsp salt
1 Tbsp vegetable oil
Filling:
1/8 oz dried wood ear mushrooms
1/2 medium yellow onion, approximately 4 oz
3/4 lb ground pork
1/4 tsp salt
1/4 tsp pepper
vegetable oil for cooking
Additional Ingredients:
fresh herbs: cilantro, mint and Thai basil, plucked and washed
bean sprouts, trimmed and washed
1 cucumber
steamed pork roll
fried onions
fish sauce dipping sauce • Fish Sauce Dipping Sau...
Yields: 30-35 rolls, 4-6 servings

I loved watching this bc it was so nostalgic. When I was little I would eat the filling out of the bowl when my mom was making this. It was one of my favorite foods.

These type of food is better to eat "fresh" , meaning the sooner, the better, right after cook, although I think few days in the fridge would be okay. Never heard anyone store Banh Cuon in freezer for later use.

I LOVE banh cuon! I wasn't a fan of making this and banh xeo when I was younger (took forever when you're the one slaving over them for everyone else's enjoyment! LOL), but I preferred making these over banh xeo because I love eating these so much more. My mom had me making these in two separate non-stick pans so it would go faster. It was neat watching all the tips at the end...it was something I knew from experience, but I had never analyzed or studied it, much less demonstrated it for people. I always love watching you "teach" people all these culinary tricks. You're so awesome and your banh cuon look beautiful!

As a Vietnamese, all I've got to see when I was young until now is the steaming method. So I can say it's really difficult if we try to make this at home. But this recipe is so so genius! Respect.
Hi Sungmi, cooking with a skillet is my Mom's technique. We couldn't find the traditional steamers in the US. My Mom and I would use 2 skillets to make them faster. I like the traditional steamer method but this method is much easier to recreate at home. Thank you for stopping by! 😀

Hi Trang, thank you for sharing this video! I followed your recipe and the banh cuon came out perfectly. I was very surprised at how authentic the banh cuon turned out -- taste and texture -- given that it was made with a frying pan instead of the traditional steamer. Your recipes are the best!

Well done Trang and thank you for sharing. I'll test this receipe in France. I made Banh cuon last week but I made a mistake. I replaced rice flour with glutineous rice flour. Very difficult to manage the crepe but the taste was really delicious.

+RunAwayRice Use ground chicken and sauté with some grated ginger, mix in the ume after the meat has cooled some, put the chiffonade the shiso and mix into the cooled ground meat. Then roll it up and dress as usual.

I love your recipes! Such helpful tips. For this recipe, although it can get greasy if the pork is too fatty, I prefer frying the shallots myself, and using some of the remaining shallot oil to fry the pork. This gives a great flavour just like a restaurant in my area.
