    500 g tilapia/ling/snakehead/catfish fillet cut into 1x2 inch cubes
    1 tsp turmeric powder
    3 tbsp minced galangal
    2 tsp rice flour
    1 tbsp plain yoghurt
    1 tsp mam tom (Vietnamese shrimp paste) or fish sauce
    1 tbsp vegetable oil
    ½ tsp ground pepper

    Dear Helen, just found your channel the other day to learn how to make Chả Cá Thăng Long at home. Back in 2013, I first enjoyed it in Hanoi at the original Chả Cá Thăng Long restaurant. It has stayed on my mind ever since then. Your video helped me prepare it very well and so delicious... I am from Germany and living in the US now. When I was a teenager, I once visited the fish market in Hamburg with my godfather. Thanks for bringing back good memories!

    Hi Helen,
    I've been so busy with work and kids that I've given up on cooking. I will just cook what ever that comes to mind and usually the usual. But after I found your videos, I now am in love with cooking again. Your voice with chosen use of vocabs, personality, and easy cooking instructions is really captivating. I just love to watch your videos. But most of all the food turn out really good. Thank you Helen for getting me back to do what I use to love the most. Cooking!!!!!

    Originally it was not made it tilapia. But I tried it on a few kinds of fish and I think tilapia works well

    Helen, thanks for the recipe. I was just in Hanoi and tried this on Cha Ca Street in the Old Quarter. I thought I'd never find Cha Ca in Arizona. But a Vietnamese friend who moved here from Saigon gave me a link to your recipe. I've made it twice so far, and it's been delicious both times. Great work!

    I ate this in Hà Nội old town, it is much less oil than this, so it was burned a very little bit but it created nice flavor

    Thank you so much for sharing your video..I love to eat but I don't like cooking much because cooking is so complicated to me...I usually just swing by the restaurant everyday to eat authentic Vietnamese foods..Watching your video make me want to cook for my family...I will watch all yours and hopefully in a few months..my cooking skills will be better....and my husband will be happy...

    Helen... THAT DISHE IS AMAAAAAAAAAAAAZING!!!!!! It's one of my greatest big favorite of all time! MY GOD! Never taste something as good as this before and I've been tryin' a lot of fish receipes. (I've been working in really good tables restaurants for the last 18 years in Québec city, so I've seen, test and taste a lot of those...) BUT THIS... WOW!!! :) THANK YOU!!!

      Helen's Recipes (Vietnamese Food) Hi Helen! Badly, I did not have the chance to go in Hanoi for tryin' it, (but I'm dreaming of!), so I've cook it myself. And, like you said, it's a fact... YOU MUST TRY IT BEFORE YOU DIE! This dishe come from the gods! :) The taste and the balance of the flavor is just incredible!!!

      jellyclam Originally the dish is make using Cá Lăng (not cat fish or snake head fish). Cá Lăng is type of a fresh water fish, it has a layer of oil under its skin, this make the fish tase moist and soft. Even in HaNoi, It is hard to find Cá Lăng, that why the dish is very expensive compare to other dish in Hanoi. I think Helen used tilapia as she couldn't find it where she is living.

    I have been living in Germany for a few years only. I could speak good English before I came. So it's not a big contradiction. Now I can speak good German too, but maybe stll not as good as English :D

    Helen! You live in Hamburg! I used to live there too. Ah, the Fischmarkt: I lived almost right above it for a while. Thanks so much for the Cha Ca and Bun Cha recipes. I have just come back from visiting Vietnam for the first time, and I'm gonna try the Cha Ca tonight here in Australia.

      I don't do Instagram, but I can tell you that the Bun Cha was a massive success. So delicious!!! We are very excited that there was enough for the freezer for another time. Just need to find some good fish for Cha Ca, and that's next!

    Just tastes cha ca in cha ca tha long. It was so delicious. Bun cha is my favorite vietnamese food. But this gives bun cha a run for its money.

    Ướp cá vào thơm lắm bạn. Theo đúng công thức thì mình phải dùng mẻ nhưng mà chắc ở Đức ko có, chị Helen thay bằng yoghurt có vị giống vậy.

    No, galanga's taste is totally different from ginger. If you are not living in Vietnam, you may find it in Asean market or place where Vietnamese people live. For me, I am living in Japan now but I bought frozen galanga from online shop.

    Em là ng hà nội ấy ạ. Thật ra món này ướp Vs nước cốt riềng nghệ chứ k phải riềng nghệ xay. Vì như vậy sẽ bị lợn cợn. Lúc rán bọn em cũng chỉ cho 1 tí dầu như xào rau thôi chứ k ngập dầu vậy đâu ạ

    i had this in Ho chi minh city a couple of years ago! It was a pretty bad memory because the fish was very fishy and the dish was sooooo oily! They put the vermicelli in oil as well!

      greenfunk If you go to HaNoi try the dish again at "Chả cá Thăng Long" or " Chả Cá Lã Vọng " , they make the dish very nice at the restaurants

    Món này ko nên chiên nhiều dầu vậy c à, với cả bao giờ hành nó chín hẳn ăn mới ngon á. Em thấy cá lăng ngon hơn bởi dưới lớp da có 1 lớp mỡ, ăn sẽ ngậy hơn và thịt cá lăng cũng mềm hơn cá lóc.

      yogurt is a replacement for mẻ (fermented rice) that add some tanginess to the dish. Rice flour helps with the crispiness of the fish
