Happy Friday! I am so glad to be back just in time for pumpkin season! These Pumpkin Oatmeal Power Cookies are SO easy to make and absolutely delicious - a great way to kick off pumpkin baking season! XO - Dani
Hi Dani!! I will definitely be making this all throughout the fall into winter. I just had a couple questions. Do you know if I can use flax eggs to sub for chicken eggs? Also, when making your own oat flour, do you add anything to preserve freshness such as bay leaf, etc? Couple more questions😂😂 can you use this flour in place of all purpose and self rising flours, and do you have a video of how to make other flours i.e., almond, etc.?
I am so glad you did this recipe. I ♥️♥️♥️♥️ it! I don't know if this a update from your one 4 years ago but, that one keeps getting recommended to me and I loved it back then and I still have it saved to my videos!!!
@@isabellelaval7294 To prepare a substitute for one egg from chia seeds, mix one tablespoon of chia seeds with two and a half tablespoons of water, and leave for about 5 minutes.
I made these today with the help of my toddler grandson 🙂 They came out delicious! I used only 1/4 coconut sugar and 1/4 monk fruit. No nuts but everything else same. Definitely a keeper! Thank you so much for sharing 💕
I just made these this evening!!! MY FIRST COOKIES I'VE EVER MADE IN MY LIFE!!! I substituted the chocolate chips for dried cranberries due to allergies, and that worked well. Thank you Dani! 😍
Dani! I just made these and i made 6 cookies instead of 12, absolute delicious!!! I am eating them as breakfast cookies this week, so yummy!! ❤ your recipes are always so healthy and yummy
I always cut up my pumpkin, skin on, but cleaned, and cook it in the pressure cooker. Cooks in a few minutes and is DELICIOUS in a home made pumpkin pie. I just followed the directions on the canned pumpkin purée, and subbed my own pumpkin. 💕
This looks delicious. I like that you added coconut sugar. I'm going to definitely make this recipe. And I'm also gonna make this with sweet potato as well.
Hi. I will be using either this recipe or your baked pumpkin one this week for an upcoming family gathering. No added sugars of any kind for me; and I am confident of tasty results as I have already baked many recipes by omitting added sugars. Subscribed.
I put in everything according to the recipe except instead of an egg I used 1/4 C of applesauce. They turned out great. Thank you for this recipe. Happy Easter 💛
These were really yummy! I subbed flax egg fur the egg and applesauce for the oil. It was a little too soft so I just added flour and it worked great. They cooked well and are delicious! Thanks for sharing.
Hi Dani, I am most def going to make these, and absolutely agree with your comment about small steps as it’s these very small steps in the right direction that make all the difference all for the better of our health and well being. Thanks for sharing this recipe, will let you know how I get on. Keep up with all your videos can honestly say they really are a great help to me and my family. Thanks a bunch for all your efforts for offering recipes and advice and handy tips. Wish you great success.
@@CleanandDeliciousDani Trying to find pumpkin purée here in the UK, not having much joy, could u recommend where I maybe able to find it. Not sure I want to buy in bulk just a small amount to begin with.
HI! I love your videos and enjoy how you include your daugther. I baked with my boys and they still enjoy doing that with me. I am wondering if I can use honey instead of coconut sugar? Thank you!
I am making these and using almond because I don’t feel like pulling out the food processor. I might as well use up what I have . I be am sure it will taste just as good . I am adding unsweetened cranberries and walnuts
GYYS These cookies are SO good, in fact, theyre TOO good! My Bible study leader made them like 3 weeks ago and I can't stop thinking about them!! I actually like them MORE than the unhealthy alternative cookies! So now I'm going to have to make some myself and yeah I'll eat way too many of them but it's OK
I substituted 1 tbsp ground flax seeds mixed with 3 tbsp water (flax “egg”) for egg. Cookies were delicious & soft. To make them crispier, you can add 2 tbsp flax seeds with more water. I omitted the coconut & nuts and used vegan chocolate chips. Thanks, Dani! 🍪🤎
Great recipe!! This is just what I need to satisfy my pumpkin craving and sweet tooth. I just saved your recipe also from last year for the pumpkin squares. I will definitely take time to make the recipes today!! Just subscribed!! 😀
Substitution for coconut sugar? I’m a healthy eater so I don’t want to swap it for white sugar but I also don’t have coconut sugar & have never used it. You make healthy eating so much fun by the way!! Thank you ❤️
This looks delicious can’t wait to make it. Since I am oil free too I will try substituting oil with half quantity’s of mashed banana and see how it goes

Doubled the pumpkin and added a scoop of vanilla plant protein powder. Sugar and oil subbed with plant butter and Stevia. Came out more like balls, but damn good.
Thank you so much Dani! I just subscribed! I'm coping with and managing some health related stuff, and trying to batch cook healthy food in advance to prevent any weak spells throughout the day. So I didn't have pumpkin. Instead added mashed canned carrots. Nor did I have coconut sugar so I used 1/4 cup of honey. They turned out pretty yummy in spite of my changes😁👍
These look amazing! I have to wake up at 2:15am to workout/move my body because I work at 4am so cooking any meals after is a no go since my family is still asleep lol I’m struggling to find a good, quick, no cook nutrition source for after those workouts that is CLEAN AND DELICIOUS. ❤
I mix peanut butter, ground flax seeds, maple syrup, monk fruit or raw honey, cinnamon, chocolate chips, sea salt, ground oats, dried cranberries, coconut flakes. Make into balls and freeze.
Just found you and subscribed - your recipes look and sound amazing. I want to try these, but is there any reason I could leave out the chocolate chips? I think I'm the only person on the planet that isn't a fan of chocolate chips :) I love love love oatmeal cookies, so I bet these will be great even without the chips. Has anyone tried them this way? I saw where someone used raisins and another used cranberries. I would just like to use none of these and see how they are. Thanks so much!!
Like so many, I love all things pumpkin. I just love FALL after these hot, Texas summers. Anyway...can these cookies be frozen? It's just me so it's safer on the belly if I can bake/freeze - otherwise, I bake/eat! 😁 (if this was in comments, I missed it). And FYI: I have an old, old, old Cuisinart food processor. Rarely used - so heavy! You've talked me into a new one with your great recipes. 😀

@@lindalubben8779 probably it will just have a different consistency…
I was with you until you poisoned the cookies with coconut
