  • These 3-Ingredient Banana Oatmeal breakfast cookies are the perfect healthy, grab-and-go breakfast or after-school snack. Made with just 3 healthy ingredients; oatmeal, bananas, and chocolate chips these delicious cookies are gluten-free, vegan, and easy to make.
    The only challenge with these banana breakfast cookies is not eating the entire tray! But hey, sometimes a girl needs a few extra cookies (joking, not joking!).

    3-INGREDIENT BANANA OATMEAL BREAKFAST COOKIES
    1.5 cups oatmeal (I used 1/2 cup rolled and 1 cup quick)
    2 medium bananas
    1/3 cup mini chocolate chips
    DIRECTIONS
    Preheat oven to 350 degrees Fahrenheit.
    Line a rimmed baking sheet with a silpat mat or coat with some cooking spray.
    Using the back of a fork, mash bananas in a medium bowl until they are broken down. Add in oats and gently stir until all of the oats and bananas are mixed together and look like a thick cookie batter.
    Now your ready to add the chocolate chips! Sprinkle them into the dough and stir until they are just mixed throughout.
    Scoop one heaping tablespoon of the dough into your hands and free form into a cookie*. Place on cookie sheet and continue until you have 12 cookies.
    Cook for 12-15 minutes or until set through and lightly golden. Cool and enjoy!
    *NOTE: these cookies will not spread in the oven so be sure to form them into a cookie before placing on baking sheet.
    Makes 16 cookies

      @@misscandy84 Somewhere in between. Without any leavening agents like eggs or baking powder, they don't get at all puffy, but they are not crunchy hard. Without any butter to make them spread out, they keep the shape you form when you put them in the oven, so I suppose you could technically alter their texture a little bit by either making them thicker or thinner when you form them. Also, the moisture content will likely decide their firmness, so I would think if you want them a bit chewier, I'd take them out of the oven sooner.

    Made 2 batches of these yesterday. They took 5 mins to prep and 15m to bake. I added pinch of salt, 1/4 tsp vanilla, and sprinkled some cinnamon and nutmeg in each batch. One batch was with chocolate chips, the other with walnuts and raisins. Both came out great. Such a delicious, hearty, portable breakfast or snack! My family loved them! Thanks for the video.

      Oooh I need to do raisins, and I have some diced pecans to use up.
      How much walnut and raisin did you add to the base recipe?

      ​@@angelpipessdI usually eyeball it but it's pretty much equivalent to the measurement of the chocolate chips in her video. So if you're doing 2 bananas and 1.5 cups of oats per her recipe, I'd add 1/2 cup of raisins and crushed walnuts (total) as a starting point and adjust to your liking. Hope this helps.

    Phenomenal!! I used old fashioned oats and let them set in bananas @ 20 min. Also added 1 tsp vanilla extract, 2 tsp cinnamon, 1/2 tsp nutmeg, 1 TBS Maple syrup, pinch of salt and 1 TBS Peanut Butter protein powder. Delish!!

    Thank you for this recipe ! They turned out surprisingly good. I would like to give the measurements in grams :
    60 gr.chocolate chips
    135 gr. oat meal
    Bake in 180 C. oven until set
    In my opinion they taste better when warm.

      Adding more information here, too: these are low FODMAPS and if you use a coeliac-friendly cereal like rice bran etc, then you have a cheap, safe breakfast or snack!

    These are the easiest cookies I’ve ever made, and they came out great! I was worried the oats would make the cookies hard and dry, but they were wonderfully soft and chewy. Will definitely be making them again

    Made these last night with only rolled oats bc it's all I had on hand and let the oat and banana mixture soak for 30 minutes. I then added some peanut butter that I melted in the microwave to make mixing it easier and the Chocolate chips. I baked mine a smidge longer bc of the added peanut butter and they turned out AMAZING.
    Thank you for this base recipe. Going to omit /he chocolate chips next time for blueberries for my daughter bc she loved these.

    Love it! Excellent idea for someone on the run in the morning. I added my personal touch - 1/2 cup shredded coconut, 1 tablespoon of flaxseed meal, 1 tablespoon of chia seeds, a touch of vanilla and cinnamon.

      Just made these for the first time. Waiting for them to cool! I took your advice and put in 1/2 teaspoon vanilla but I made them with chopped walnuts instead of chocolate chips. I think they'll be a healthy snack for my 3-year-old granddaughter...and for me, too!

      @@noeldeal8087 They were excellent! My 3-year-old granddaughter loves them! Unfortunately however, because of COVID-19, I haven't been able to see my children or my granddaughter who live only 10 minutes away. I've made these cookies several times and always try to keep a batch in the freezer. It's a great recipe, especially because you don't have to bother with a mixer. Very easy!

      I just posted some pancake recipes. One of them uses oat flour made by grinding rolled oats. Great way to sneak them in for picky eaters!

      @@debrajones3112 nope, there's sugar in the choc and banana. my first batch was with white choc chips and bits of dried cherry. next batch will be traditional choc chips.

      Definitely! I had a hard time finding some when I ran out, but they're back in stores now! I topped my Banana Bread Pancakes with them! Essential!

    Omg where have these been all my life! So amazing especially since I tend to like bananas that are not so ripe. Perfect way to use super ripe bananas. I plan on making these with my students one day❤

    did 2/3 quick oats, 1/3 5 minute oats,2 ultra brown ripe bananas, and used 1/2 chocolate chips & 1/2 raisins, 1/4 tsp cinnamon. Took 35 minutes in 350º toaster oven, but came out delicious. Thank you.

    Love this recipe! It's perfect in the summer with some yogurt on top. I just stick them in the freezer for a little to firm up the yogurt, and it's a healthy icing alternative.

    I’ve made these three times! Tonight I added 1/2 more banana and I couldn’t find mini dark chocolate chips so I bought regular dark chocolate chips and did a very rough chop. So yummy! My boss keeps asking me to make more! Thanks Dani! You’re a love!

    These are so delicious! I made them with 2 cups of quick oats and added honey, a pinch of salt and chocolate chips. They’re amazing and I love the texture! So quick and easy.

    I just made this! I added a little bit of milk, I drink lactose free milk but this time we only had whole milk in the fridge, it still worked. I also added some powdered cinnamon, vanilla, chia seeds, pumpkin seeds, flaxseed, sunflower seeds, walnuta and pecans. They came out soooo good!!

    as a collage student I can say these are super easy to make! I made them with raisins and nuts, and they turned out great, if a bit soft at first, so they had to cool down to get crispy-er and stay in shape.
    they are truly a very healthy and easy breakfast choice, and I want to try to make cereal bars by maybe adding honey or syrup to the mix, since it is really simple to make.
