- These pumpkin pie bars are the perfect healthy dessert for an autumn gathering. Made with pumpkin puree, coconut flour, maple syrup, and warm, cozy spices; they’re gluten-free, grain-free, and oh so delicious!
If you like pumpkin pie, you will love the convenience of these pumpkin pie bars studded with chocolate chips. They have a light, custard-like texture just like pie but can be cut into squares just like a brownie.
This is a one-bowl-dump-and-stir recipe (my favorite type!). Much easier than pumpkin pie and they work well for breakfast, dessert, or a snack.

15 ounce can of pumpkin puree
3/4 cup coconut flour
1/2 cup maple syrup
1/4 cup almond milk
2 eggs
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/2 teaspoon baking soda
1/3 `cup chocolate chips*
INSTRUCTIONS
Preheat oven to 350ºF.
Grease and 8×8 baking dish with coconut oil, butter or cooking spray.
In a large bowl combine; coconut flour, pumpkin puree, maple syrup, almond milk, eggs, pumpkin pie spice, cinnamon, baking soda, and salt. Mix well.
Stir in chocolate chips.
Transfer batter to prepared baking dish.
Bake for 45 minutes or until set through and lightly golden brown on top.
Cool completely and refrigerate for a minimum of eight hours before cutting into nine pieces. Enjoy!
NOTES
Be sure to buy dairy-free chocolate chips if you need the recipe to be 100% dairy-free.
For a more cake-like texture, swap the coconut flour with 1 cup of oat flour and eliminate the almond milk. I love this version for breakfast.
Be sure to store these bars in the refrigerator. They are best when eaten cold.
Experiment with different stir-ins. Dried cranberries, shredded coconut, pecans, and walnuts would all be delicious!

@Fatima B, if you can, make them now for your Grandparents! I'm sure they would love them and it would bring them Joy that you made these treats for them. Might also bring up recipes that they enjoyed when they (or your parents) were your age (or younger) and you could recreate them together. Now is the time to gather "old" family recipes for your future family. If it's possible have them handwritten by your parents/grandparents, etc. They will become treasured items in generations to come. Memories made with family, food and traditions are the best!! JD Do thank you so much for your kind words :) I think it's perfect timing to make the pumpkin bars since my Grandma passed away a week ago and I didn't get to spend a lot of time with her, but I will make them for my whole family, food is one of the best things that gather families together, I'm sure Grandpa will love them, stay safe :)

I used 1/4 cup maple syrup instead of 1/2 cup and added an extra 1/4 cup of almond milk to make up for the missing liquid. Then I added some stevia drops to replace some of the missing sugar. Came out great and with half the added sugar!
I would use torani sugar free pumpkin pie flavoring for the pie spice and some of the liquid. Its also sweet.

Hi Dani, looks good. Here in Australia we grow all kinds of pumpkin, freely available at the supermarket and the fruit and vegetable market, thus we cook it and mash it ourselves. No need for a can!

Every time I think your last recipe is the best, you come up with an even better one the next time! I love these one-bowl mixing dishes. My wife loves it when I try out your recipes.
I did not have pumpkin puree so I used sweet potato puree instead. I also used raisins instead of chocolate. Next time I will use less of the pumpkin spices (it was a little too much for me). But otherwise, it was delicious.

I absolutely love this recipe! I swap out the maple syurp with Simple Truth brand Maple Flavored Allulose Syurp which is amazing (very close in taste to real syurp and healthy) and only 40 calories in 1/2 cup.
