It's a good recipe. I just took a batch of 10 muffins out of the oven this evening. Baked in a silicone pan. Nice domed top. The baking time is a lot longer though. Had to go an extra 5 minutes at 365ºF. When done, the tops were still not brown so I put the broil on for a minute and thirty seconds. Nice texture. Looking forward to trying with blueberries next. And after that, an apple cinnamon one.

@HowTasty was surprised to see the batter kept in the fridge. Baking cakes should always be room temperature, right? Please clear my doubts. Want to try it badly but keeping the batter in the refrigerator making me to think twice.

I made these, but they didn't come out as good as i expected. The texture was good but they were really dry. And even the sweetness was a little too less for the amount of flour that went in.
Really expected them to come out good after reading the comments, but they didn't so I don't think I am going to try making these again :(

Is muffin molt and cupcake molt are two different things?
I use the same mold when I make muffins and cupcakes. But the batter should be slightly different: cupcakes should be flat on top, muffins should have a high domed top.
When I mix the dry ingredients with the milk mixture , it’s not runny as you have . The 365 temp for 13 min is not yet done , so I add 5 min , but the muffin didn’t turn brown . The 410 for 5 min is not the same in the video .
The temperature differences could be from the difference in ovens and / or altitude or type of pan, darker or lighter. For example, when I bake, usually my stuff is done 5 minutes earlier. Good luck. Happy Baking

Can l substitute the all purpose flour wth self raising flour and if yes can l skip baking soda
If you use self rising flour you should skip baking powder but use baking soda. Consider that with self rising flour they will turn out less tall and slightly different than mine.

I'm using a classic muffin pan, but I think the size depends on every Country...as you can see, my muffins are not small :P pay attention to not use too much batter or the muffin batter could fall while baking!

Yes, it curdles, it is totally normal and it's ok! This is an easy way to prepare homemade buttermilk ;)
Is it okay if I use regular white sugar instead of caster sugar? (sorry, I'm not a baker nor know anything 'bout it, I'm a kid- though I like baking.)

I hate it when the written recipe is somewhere else. Why can’t it be in the description. It’s easier to look at the recipe and the video in one screen and not pausing at every second. Just a suggestion..

In my first videos I wrote the recipes in the descritpion box, but many of you complained that there wasn't a printable recipe option (and the description box has a limited space so for more complicated recipes there wasn't enough space). That's why I spend many hours to upload my recipes in a website where you can immediatly read the recipe and click on "print".

Just want to know...the vinegar or lemon juice..when adedd to milk..it will spoil the milk???will it???and what about the taste?
If milk doesn't feature enough fat it curdles with vinegar/lemon, it's normal, don't worry it works great too! Milk+vinegar (or lemon juice) is just a way to make buttermilk at home. You can substitute this mix with buttermilk.
