Double Chocolate Muffins Soft and Moist - EASY RECIPE

    Ingredients:
    250 grams of soft butter
    250 grams of dark chocolate
    2 tablespoons instant coffee
    180 ml of boiling water
    90 grams of self-raising flour
    140 grams of white flour
    Half a teaspoon of baking soda
    Half a teaspoon of salt
    70 grams of cocoa powder
    350 grams of sugar
    4 eggs
    2 tablespoons of oil
    120 ml whipping cream
    200 grams of chocolate chips
    Preparation:
    ▪Heat the oven to 160 degrees 320F
    ▪Arrange muffin liners in a 12-hole mold.
    ▪In a large bowl, whisk all the dry ingredients - the flour, baking soda, salt, cocoa powder and sugar.
    ▪In a medium bowl, whisk the eggs, oil and whippingcream.
    ▪Meanwhile, in a medium saucepan, melt the butter, coffee, boiling water and dark chocolate. Note, melt over low heat and stir so as not to burn the chocolate.
    ▪Remove from the heat.
    ▪Add the egg mixture to the dry mixture and mix - the mixture will be very dry.
    ▪At this stage, pour the melted chocolate mixture and mix well until you get a uniform and smooth mixture without lumps. Mix in the chocolate chips.
    ▪Transfer the mixture to a liter measure and pour into the 12 muffin liners (without a mold this will not work, the Muffin liners will lose their shape and the mixture will liquefy out).
    ▪Bake for 20-40 minutes until a toothpick inserted into the heart of the muffins comes out with moist crumbs.
    After baking, sprinkle some chocolate chips on top, the heat of the muffins will melt them slightly.

      Hi! I'm from Chile and I have some questions about the ingredients ( I beg your pardon if I write wrong, I've been studying English for just one year).
      1.- Is the soft butter with or without salt ? Because here we have both.
      2.- I wonder if the self-raising flour has baking powder and the white flour is for all purpose.
      Just say they look pretty and your channel is amazing! Thanks for share your recipe.

      I used unsalted butter.
      The rising flour has baking powder inside, the white flour is all purpose flour.
      If you are not able to find raising flour you can make it by yourself, on every 100 grams of flour add 1 tsp baking powder.
