I made these muffins yesterday and they are very delicious. The batter was more liquidy than other muffins that I baked but I left them at 410F for about 10 minutes and then down to 375F for another 15. What I like about them is that they are not too sweet. Thank you.
FYI buttermilk, although widely available in the US (I believe), and popular in Ireland, is not so easy to come by in the mainland UK. Consequently It tends to be expensive, even if you can find it.

I baked without resting time. You can try to put the batter in refrigerator and let it rest for 10 minutes before baking. The muffin top shape could depend on your oven. I've used electric oven, fan off, upper+lower heat.

In the chocolate chip muffin recipe melted butter was used while the sugar was mixed with the dry ingredients. Here the creaming method is used with room temp butter and sugar. Is this method better for double chocolate chip muffins? Or is it fine to use your chocolate chip muffin here too with melted butter. No, when you make the batter you have to bake them because they are made with baking powder that is an instant leavening ingredient, you can’t store the raw batter for days. The solution is to bake them all and store in freezer up to 2 months the muffins you don’t want to eat; or you can halve the ingredients and prepare half batch (6 muffins). Happy baking!

I live in Italy and here we usually have electric ovens (no gas) that have many options: when I bake sponge cakes or muffins, I always turn off the fan (that usually gives more dry and crispy crust) and use the option that gives heat at the same time upper and on the bottom. If you have gas oven, you can get heat only from the bottom. In this case, if you have fan, turn it on: this could help you to get more uniform baking and avoid burning the bottom while the top is unbaked. In the oven you can set only one temperature at the time: in this muffin recipe for the first 5 minutes I bake at 210°C-410°F, then low the heat at 190°C-375°F and bake until they are done (about 16 minutes). Every oven is different and nobody knows your oven better than you, so timing, temperature and mode could vary depending on your oven! Hope this could help you! Much love

These get a 5 🍶🍶🍶🍶🍶 out of 5 on the ''Got Milk'' meter 😊😋. This would be nice for a cake as well. My next cheesecake will be a chocolate with Cherries 🍒 🍒. Hi! Can you explain the science between using solid butter instead of melted butter here? In the chocolate chip muffin recipe melted butter was used while the sugar was mixed with the dry ingredients. Here the creaming method is used with room temp butter and sugar. Is this method better for double chocolate chip muffins? Or is it fine to use your chocolate chip muffin here too with melted butter. I usually never have luck with the creaming method and your chocolate chip muffins were really good thats why I ask. Thanks

No, when you make the batter you have to bake them because they are made with baking powder that is an instant leavening ingredient, you can’t store the raw batter for days. The solution is to bake them all and store in freezer up to 2 months the muffins you don’t want to eat; or you can halve the ingredients and prepare half batch (6 muffins). Happy baking!

@@asiabibi1100 Start baking at 210°C-410°F for 3-4 minutes, then low the heat at 180°C-350°F and bake until they are ready. The timing depends on your oven and the size of your muffins: they are ready when the top is dry and if you put a toothpick inside, it will turn out completely dry and not wet. Consider they will bake pretty fast if they are very small.

Hi Nam! This recipe is for 12 muffins, if you want to fit only 6 molds you should half the ingredients. Since the size of muffins is the same, the baking time and temperature are the same.

Hi Rain and welcome to my channel! No, it was a fresh full fat whole milk. You can also use whipping cream for homemade buttermilk, but heavy cream has too fat and the hoememade buttermilk will turn out too thick. Happy baking

Hi Tharindra, I've already answered you, but I answer again, maybe some people could find this helpful. No, you can't store this batter in refrigerator for days because of the baking powder; you have to bake your muffins immediately when you prepare the batter. Then you can store your muffins in freezer.

What is upper and lower heat referring to? How you talk about the facts that this recipe has two temperatures or are the upper and lower heating elements of your oven on at the same time? In the U.S. most ovens only have a bottom heat source on when baking regardless of it being electric or gas. Many of our conventional gas ovens do not have a an upper burner since they often have a broiler drawer underneath the main oven.
Hello Robert and welcome to my channel! I live in Italy and here we usually have electric ovens (no gas) that have many options: when I bake sponge cakes or muffins, I always turn off the fan (that usually gives more dry and crispy crust) and use the option that gives heat at the same time upper and on the bottom. If you have gas oven, you can get heat only from the bottom. In this case, if you have fan, turn it on: this could help you to get more uniform baking and avoid burning the bottom while the top is unbaked.
In the oven you can set only one temperature at the time: in this muffin recipe for the first 5 minutes I bake at 210°C-410°F, then low the heat at 190°C-375°F and bake until they are done (about 16 minutes).
Every oven is different and nobody knows your oven better than you, so timing, temperature and mode could vary depending on your oven!

Full fat milk. If you don't have it, you can use semi-skimmed milk, but the milk+vinegar mix could curdle (don't worry, it works fine too!).

Hi Dark Magic and welcome here! It's a milk from a farm, it features more fat than normal store-bought milk so when you add vinegar it becomes thicker and it doesn't curdle. If you use store bought whole milk it curdles, but it works well too! I think you can get that type of whole milk with half milk half cream 😉
