Fat-free cheeses can actually work pretty well too. The trick is to heat them with a substantial amount of water or skim milk, with sodium citrate to help emulsify it. It's not as richly flavorful as full-fat cheese, or even low-fat cheese, but emulsifying it first gets you acceptable texture and a more cheesy aroma than the plain cheese. Flavor and nutrition can be further improved with the addition of powdered dry mushrooms and/or nutritional yeast.

Considering the calorie-protein ratio i would not label this as a "high protein" meal but,It does look very very good 👌🏽 this is more of a healthy low cal meal and not necessarily "high" protein. However it can easily be modified by using a lower cal wrap and more egg whites or turkey to get a more desirable protein to calorie ratio.

I make a lot of wraps at work so just some tips for anyone who has a hard time wrapping:
for thicker tortillas you can throw them in a hot pan and let them warm up slightly. You don't want them to be hot, just slightly warm. Doing this can help prevent tearing when you wrap. If your tortilla is too thin however, this can make it tear much easier so be careful.
