I've made these twice and they are excellent. I love them! 2nd time I chopped up half an onion and cooked it with the Kale separately to get a good Sautee on the onions. KALE TIP from a different recipe. Take the leaves off the stems and massage the Kale until it softens and darkens. This helps remove some bitterness and makes the Kale less fibrous.
Initially I thought adding cottage cheese to the meat was really weird but after trying it today this is hands down my favorite burrito recipe. Definitely gonna be making my taco/burrito/nacho meat this way from now on
Try making a breakfast casserole with this in it. It is absolutely delicious and the cottage cheese melts and makes the texture amazing. I'm sure ricotta cheese would work as well.
I'm a university student that lives on his own and just lost 5 lbs in the past month because of midterms whilst already being a fairly slim person at 5'10 and 130 lbs usually. Did not expect a video as random as this to rejuvenate me, but I'm super excited now and am going to try and make these for my lunch. Most of the cooking videos I watch end up using way more than they suggested (cough cough Joshua Weissman) and become really elaborate in ways that would maybe be quick for the person making the video but take a lot longer for noobs like me. In sum, thank you for this idea and making sense can't wait to fix my diet with this!

I was in the same boat as you. 5'10 133. Trick for me was snacking throughout the day. Dont skip your 3 meals, but i usually have a big lunch, breakfast sandwich, smallish dinner, and snacks like protein bars, shakes, oatmeal. With the gym i put on about 20 pounds over a year
A few important suggestions as someone who was the same weight; Firstly, consider smoothies. You probably think you're eating a lot of food, if you were anything like me. You almost certainly aren't. Really high calorie smoothies with things like avocados, frozen berries, oats, milk, whole milk greek yogurt, almost single-handedly managed to add 5 or 10 lbs to me. The other thing I'd suggest is just start lifting weights, if you haven't already. It makes your body feel so much better, builds your appetite, and helps add mass.
If y'all can spare a little more time, I love adding carmelized onions using America's Test Kitchen's nonstick method (uses less oil). Roasted red peppers are another excellent and healthy nutrient and flavor booster. Either way, awesome recipe!
IDK what "America's Test Kitchen's nonstick method" is but I've always just cooked them with water because it eliminates the chances of them burning and it makes them cook even faster it seems.

For anyone else who loves sour cream with their burritos, I just made these and dipping them in nonfat plain Greek yogurt is an excellent high protein substitution that tastes the same. I haven't tried putting them inside the burrito but I assume it isn't the best when you reheat them. Loved the cottage cheese method! Never seen that before
If you want fluffy eggs with added protein add that Greek yogurt to the egg mixture and mix It up fairly well. Then add in some chives and garlic powder! takes this already great recipe even further.
People seem to still be held up on salt. The amount of salt you're adding to your home cooked food is wildly less than the SODIUM added to prepackaged foods. Unless you're already at risk of or have high blood pressure, cooking with a good amount (the correct amount) of salt is probably not going to cause you any issues.
I've watched my fair share of cooking channels. I think I can easily say: Keep this up. You've got a nice quirk to you that I think will carry you far. Good luck in your endeavors.

I tried these today they were super good. I don’t know why I never tried the regular ground turkey for breakfast. The cottage cheese was perfect everything about it and you can put it in the freezer! Such a great recipe I’ll remember for the rest of my life😂
I already add cottage cheese to my eggs before I cook them for the extra moisture and it always SLAPS! I never thought about adding it in with the meat and seasons!! Going to definitely make these in soon!

I was actually on UA-cam and I saw your video for a high-protein breakfast burrito. so I decided to take a look, and it really caught my attention. I am a 60 your old blind guy and was looking for something for a little different breakfast routine. I made this this morning. I just made it as a scramble. Damn! This was good. Your burrito will be cycling in and out of my eyes morning routine. Keep it up. Straightforward easy to follow. Even for me.
I did this with bison 90/10, spinach instead of kale, added 1 jalapeno, 1 4oz can hatch green chile, added 1 tsp of ground cayenne pepper. Before browning the meat I sauteed a yellow onion, 4 cloves garlic, and a red bell pepper in avacado oil. Then tossed in the bison. The cottage cheese thing was new to me. Loved it.
Really great video! This was in the recommendations on a 30 second video on how to wrap a burrito, I've never successfully gotten everything inside without having either several folds of dry tortilla to bite through or filling all over my hands. But after a rough fast food experience where there was oil leaking out the bottom of the wrap all over my hands, I'm going to make an effort to make my own burritos. Tried out the cottage cheese/turkey combination to make street style tacos with fresh onions and was actually impressed with the taste compared to traditional carne asada/pollo asado! Game changer for sure.
Made some of these for breakfast for the week, and I used breakfast sausage and spinach instead. They’re so good!! The additions I made taste like biscuits and gravy
J Kenji López also suggests adding a bit of a corn starch slurry to your eggs to keep them extra fluffy and moist, I’ve noticed it’s helped with my eggs to not overcook as easily
@@TheDarkWallChris I usually do about half a tablespoon water with half a teaspoon of corn starch for every 2-3 eggs. Apparently as water evaporates which would normally lead to dry eggs, with this method the corn starch absorbs the water as well to make it a little creamy. I’ve had people tell me they’re the best scrambled eggs they’ve ever had, when to me it’s just a pretty basic recipe I make and followed Kenji’s methods lol

i love seeing the cottage cheese added. It's a fairly common thing to do with meat in Eastern Europe. although they use sour cream a lot more often. but their's is much healthier.
European sour cream has more calories per gram... And sour cream has about double the calories per gram compared to cottage cheese. Not sure how you're defining healthier here.
I don't usually comment, but damn now I am obligated to do it - this is hands down one of the GOAT recipes in UA-cam 😤 So quick and easy (took me like 40 mins total), great macros, and so tasty. Only tweaks I made: - 7g of salt instead of 9-12g - added some honey to the chicken mix to balance things out - sprinkled on some MSG to the chicken mix 🦍

I just made some. This blows away the traditional morning burritos out of the water! Super filling and it is still creamy even after reheating it from the microwave.
My mom hates that I eat frozen empanadas every day since they really provide no nutrients. I only make them cause they taste alright and I don't have to stand around cooking a lot but this looks amazing. I love just egg and cheese breakfast burritos but this looks like a great lunch alternative for me to have with a fruit of some kind.

Ooookay! I'm definitely making this. I eat eggs just about every morning and often make up burritos, but it can get old. This, being packed with protein ingredients has me THRILLED! As my first meal of the day, I want to set my body up for success so I look for high protein/low carb options to break my "fast" with. I'm extremely excited about the cottage cheese aspect and how it transformed the meaty part of the dish. I have always hated cottage cheese, but recently, I have learned cottage cheese can do wonderous things! Something I make all the time now is cottage cheese pancakes and I love it. ~Going to the kitchen now to prep me up some burritos, baby!!

Listen. You should brown the meat first, let it release its water, then when it’s done browning, add the spices at the end. Otherwise your spices are actually burning. These spices don’t really needs to be cooked so it’s better to add them at the end when the meat is done browning. I think this could also use some browned onions. First brown some onions in the pan, then add the meat. This is how we cook a lot of Mughal dishes here in india ❤️
Thanks for the tip! It probably didn’t show that well in the video, but I got a good brown on one side of the turkey before I added the spices. That was good enough for me.

Honestly, this burrito changed my life too! Now I'm making a batch of these or a curry burrito every weekend, or every other if stock is building up. I have a way easier time getting ready for work not trying to make a lunch, and my whole office is jealous every time I pull one of these out. Make sure to pull out of fridge the night before, then 1-1:30 a side in the microwave (depending on the microwave) does it perfectly. Would live to see more burritos ideas! Been trying to invent a steak & Mac & cheese one but not convinced yet. There must be more ideas perfect for these wraps. Great video.

EMPHASIZE THE SPREADABLE PART OF THE COTTAGE CHEESE. I used normal cottage cheese and it just turned into nacho cheese sauce and never boiled down enough to go into a burrito. Don’t make the same mistake
It's ok you can still use regular cottage cheese! I did because my store didn't have spreadable kind. But I used less than what he did. I basically used 4 tablespoons in 2 lbs of turkey. You gotta be sure to cook the turkey until all of the liquid has either evaporated or cooked back into the meat. This can take a while, like for me I think it was a good 20 min until I added the cottage cheese. It was very creamy at first but not soupy, and I just cooked until all the little curds melted. It came out perfect
@blgdinger3 Greek yogurt is perfectly good to add just aybe don't use as much as the cottage cheese or it'll be very very creamy. And it also won't add a cheesy flavor, probably be more of a tang.
veges arent inherently healthier... especially kale with its high oxalates. Veges like kale tend to do damage to your gut lining and overlaod your body with "anti-nutrients". Just eat simply and ditch the hippy veges!
Primary take away here is the cottage cheese use. You can easily get it sub 400 calories and close to 60g of protein with a healthier wrap and some fat free cheddar, which are my personal reccomendations. That being said this is a great foundational recipe / idea.

Which granted isn't unheard of in healthy recipes but I'd not seen it in this context. So yes, as I stated originally, the primary take away I see here is the cottage cheese use. I stumbled across your video by mistake the other day. I was actually on UA-cam and I saw your video for a high-protein breakfast burrito. so I decided to take a look, and it really caught my attention. I am a 60 your old blind guy and was looking for something for a little different breakfast routine. I made this this morning. I just made it as a scramble. Damn! This was good. Your burrito will be cycling in and out of my eyes morning routine. Keep it up. Straightforward easy to follow. Even for me.

I did this with bison 90/10, spinach instead of kale, added 1 jalapeno, 1 4oz can hatch green chile, added 1 tsp of ground cayenne pepper.
Before browning the meat I sauteed a yellow onion, 4 cloves garlic, and a red bell pepper in avacado oil. Then tossed in the bison.
The cottage cheese thing was new to me. Loved it.

Really great video! This was in the recommendations on a 30 second video on how to wrap a burrito, I've never successfully gotten everything inside without having either several folds of dry tortilla to bite through or filling all over my hands. But after a rough fast food experience where there was oil leaking out the bottom of the wrap all over my hands, I'm going to make an effort to make my own burritos. I also really appreciate the lack of call-to-action and sponsor bits, just mentioning your Patreon and affiliate link is classy and appreciated greatly as someone who does their best to avoid having corporate marketing shoveled into their eyes. I’ve made breakfast burritos with cottage cheese but I blend the cheese with eggs. Makes them moist and fluffy.
Fresh mozzarella, cottage cheese, or ricotta! All blend in with the eggs to add more protein!

Tried out the cottage cheese/turkey combination to make street style tacos with fresh onions and was actually impressed with the taste compared to traditional carne asada/pollo asado! Game changer for sure.
Made some of these for breakfast for the week, and I used breakfast sausage and spinach instead. They’re so good!! The additions I made taste like biscuits and gravy
J Kenji López also suggests adding a bit of a corn starch slurry to your eggs to keep them extra fluffy and moist, I’ve noticed it’s helped with my eggs to not overcook as easily

@@TheDarkWallChris I usually do about half a tablespoon water with half a teaspoon of corn starch for every 2-3 eggs. Apparently as water evaporates which would normally lead to dry eggs, with this method the corn starch absorbs the water as well to make it a little creamy. I’ve had people tell me they’re the best scrambled eggs they’ve ever had, when to me it’s just a pretty basic recipe I make and followed Kenji’s methods lol

i love seeing the cottage cheese added. It's a fairly common thing to do with meat in Eastern Europe. although they use sour cream a lot more often. but their's is much healthier.

So quick and easy (took me like 40 mins total), great macros, and so tasty.
Only tweaks I made:
- 7g of salt instead of 9-12g
- added some honey to the chicken mix to balance things out
- sprinkled on some MSG to the chicken mix 🦍
Made these for the first time today. Comes out to like $2.85 per burrito all said and done, pretty good. The cottage cheese was a real 'trust the process' moment lol

I just made some. This blows away the traditional morning burritos out of the water! Super filling and it is still creamy even after reheating it from the microwave.
For me after microwaving they are always still frozen in the middle but the outside is crazy hot and dissolves. Maybe in the oven is better

My mom hates that I eat frozen empanadas every day since they really provide no nutrients. I only make them cause they taste alright and I don't have to stand around cooking a lot but this looks amazing. I love just egg and cheese breakfast burritos but this looks like a great lunch alternative for me to have with a fruit of some kind.

Ooookay! I'm definitely making this. I eat eggs just about every morning and often make up burritos, but it can get old. This, being packed with protein ingredients has me THRILLED! As my first meal of the day, I want to set my body up for success so I look for high protein/low carb options to break my "fast" with.
I'm extremely excited about the cottage cheese aspect and how it transformed the meaty part of the dish. I have always hated cottage cheese, but recently, I have learned cottage cheese can do wonderous things! Something I make all the time now is cottage cheese pancakes and I love it.

Listen. You should brown the meat first, let it release its water, then when it’s done browning, add the spices at the end. Otherwise your spices are actually burning. These spices don’t really needs to be cooked so it’s better to add them at the end when the meat is done browning. I think this could also use some browned onions. First brown some onions in the pan, then add the meat. This is how we cook a lot of Mughal dishes here in india ❤️
Thanks for the tip! It probably didn’t show that well in the video, but I got a good brown on one side of the turkey before I added the spices. That was good enough for me.

Honestly, this burrito changed my life too! Now I'm making a batch of these or a curry burrito every weekend, or every other if stock is building up. I have a way easier time getting ready for work not trying to make a lunch, and my whole office is jealous every time I pull one of these out.
Make sure to pull out of fridge the night before, then 1-1:30 a side in the microwave (depending on the microwave) does it perfectly.

EMPHASIZE THE SPREADABLE PART OF THE COTTAGE CHEESE. I used normal cottage cheese and it just turned into nacho cheese sauce and never boiled down enough to go into a burrito. Don’t make the same mistake
I did the same thing, I was able to save it by chilling it first then stirring. Still will be runny but put it on top of everything before you wrap it

Crap! I was about to make these but I have the wrong cottage cheese.
It's ok you can still use regular cottage cheese! I did because my store didn't have spreadable kind. But I used less than what he did. I basically used 4 tablespoons in 2 lbs of turkey. You gotta be sure to cook the turkey until all of the liquid has either evaporated or cooked back into the meat. This can take a while, like for me I think it was a good 20 min until I added the cottage cheese. It was very creamy at first but not soupy, and I just cooked until all the little curds melted. It came out perfect
@blgdinger3 Greek yogurt is perfectly good to add just aybe don't use as much as the cottage cheese or it'll be very very creamy. And it also won't add a cheesy flavor, probably be more of a tang.

Definitely true! What I find most healthy cooking channels forget in their recipes are things like fiber and saturated fat
veges arent inherently healthier... especially kale with its high oxalates. Veges like kale tend to do damage to your gut lining and overlaod your body with "anti-nutrients". Just eat simply and ditch the hippy veges!

Primary take away here is the cottage cheese use. You can easily get it sub 400 calories and close to 60g of protein with a healthier wrap and some fat free cheddar, which are my personal reccomendations. That being said this is a great foundational recipe / idea.
