Old School Cafeteria Rolls

  • Do you remember these from school? Here's the recipe.
    1 cup of warm water, 105-110 degrees
    1 pack of yeast
    1/2 tbs of salt
    1/4 cup of sugar, use 1 tbs of the sugar to activate the yeast
    3 1/4 cups all purpose flour
    1/4 cup of melted shortening(Crisco)
    1 egg
    Mix and let rise, punch down the dough and shape into rolls. let rise again and bake at 350 for 30 minutes. Brush with warm butter and serve.

    I loved our school lunches. Especially the rolls, tomato soup, chicken tetrazzini and the Friday pizza. Oh and the peanut butter cakes.

    Good morning! Had to beam in to tell you I realized my hubby was watching this video the other day - lucky me! He stirred up a batch of these yesterday and they got done just in time to have sliders for dinner. What a perfect recipe - the rolls turned out really good; so tender and tasty.     I've made these 2x and mine don't come out as nice looking. But they taste amazing! Do you have any advice on how to make them fluff up more? I follow the recipe to the T. Each time it has to rest I wait for it to double. The yeast in the measuring cup with warm water and sugar doesn't look as big as yours does in the video. But I do make sure the rest of the resting steps have the dough double in size. I just dont know what I'm doing wrong.

    I made these today. I have no idea what I did wrong or what happened but mine came out looking like biscuits and weren’t fluffy at all, like the video showed. They were still delicious but I’m wondering if I did something wrong.
