My mother makes these every year for Thanksgiving. They're everyone's favorite thing at the meal. She even trades a batch of them for tamales with my brother-in-law's family.
Now that is a win win.
I can't wait to make these for my 92 yr old Mom on her birthday. She would buy Parker House rolls back in the 50's from a small neighborhhood bakery in Spokane , WA. Always for special occasions. I remember the wonderful smell coming from that white paper bag. Those rolls from my childhood were shaped and layered exactly like these. I believe the only difference was they didn't have the buttered tops. They were baked to light crust with a slightly flour dust on top. Thanks for the wonderful memory. We haven't had these since the 60's.
Brings back a Great memory of a trip to Boston. We wanted to get some Boston Cream Pie, which was originated at the Parker House. So we asked the concierge where to go to get it, and he said, “the pah-kah house”. Being from the Midwest, we didn’t quite understand that South Boston accent…so we said “huh?”, which caused him to ridicule us by mocking our use of the letter R.

Oh Chef John! These are my mother's rolls for holiday meals! Arthritis took away her ability to make these without a mixer at age 50. So 10 year old me would be trusted to make the journey on Thanksgiving morning from East Oakland to Neldam's Danish Bakery near Pill Hill and pick up 3 dozen Parker House rolls, pound cake and a decorated cake. They were good, but not mom's.
When was this? In the 70’s?

I remember a scene in the Sopranos where Paulie Gualtieri and a friend of her -mother- (spoler alert: aunt) are wrestling with each other to steal the Parker house rolls that were put there for the table 😂
He even asks the waiter to wrap them up in cellofane for them to take home 😂
Thank you Chef. I was successful in duplicating your recipe. Recipe amounts created a smooth, supple and easily workable dough. The technique for shaping the rolls provides for a great vehicle for creating a "hinge" which allows the roll to be easily opened and stuffed. Upon cooling on a rack, rolls not for immediate use were placed in a ziplock freezer bag and immediately frozen. Upon thawing naturally or in the microwave x 30 sec. brought them back to a "fresh out of the oven" state. Great recipe for holiday gatherings, parties or pot luck dinners. Thank you for continuing to bring high quality recipes which can be easily replicated by the home cook or baker. Lastly, I used a Kitchenaid Stand mixer and bread flour in lieu of AP flour. From experience I have found that using King Arthur flour for my baking needs has been a game changer because of it higher protein content.
Rolls like this are my Thanksgiving tradition I've been doing for years, but my form factor is a little bit different. I followed a recipe out of an old better homes and gardens cookbook and when I shape I do cloverleaf rolls, so I cut the batch into 54 tiny balls and then put them three at a time into 18 cups on muffin tins, I happen to have a 12 and a six that my mom has had for longer than I've been alive, let them proof brush them with butter and give them 15 to 18 in the oven. We currently have nine people at our Thanksgiving dinner so that's two each, and each one naturally subdivides with three perfect cut surfaces for buttering, they're awesome.

Hah! RETRO! This is a blast from the past for me. My Mom used to make these for most of her dinner parties. As a hapless kid, I was dragooned into making literally hundreds of these rolls. We're talking the '50's and 60's here. They WERE really good and I ate a lot of them.
fun fact: both Malcolm X and Ho Chi Minh spent some time as workers in Parker House Hotel kitchen (where the namesake rolls were developed)

My Grandmother was from Boston, home of THE Parker House. My dad said she'd make these rolls for every Sunday dinner and holidays. Love them!
By the way, the Parker House is also the originator of Boston Cream Pie!

My mom made these all the time. She was well know for dropping off her rolls to those who needed cheering up. Hers were shaped more like clam with the seem on top. But def the same.
Just pre-made a batch of these for Christmas dinner!! I snuck one early though and used the leftover melted butter to dip it, and it was probably the best roll I've ever made. Thanks Chef John!!💕
I made them round btw and I did add a bit of honey to the milk/water/yeast mixture (even yeast deserves a lil christmas treat)
These look delicious, Chef. My personal dinner roll memories are of my grandma on my dad's side making rolls for holidays; my own mom always bought brown and serve because we were always short on time at Thanksgiving/Christmas, and her mother didn't cook anymore by the time I was born. Grandma always made rolls in a muffin tin and they were probably not quite this rich, but I'm going to try these out for Christmas this year, I think. I'll probably do them in a muffin pan, so they won't be exactly proper Parker House rolls, but I'll bet they're still great.

These remind me so much of the process of making bao or duck buns, that are steamed....used to make so many of them at my old job. Instead of butter it was duck fat! Yummy! Thanks Chef! Your videos are great!
This is what we call in Jamaica 🇯🇲 'Coco Bread'. The technique and size differs slightly but it goes well with Jamaican patties or cheese, you can get them with meat or vegetables baked inside that's when we call it 'loaf'.

My favorite roll. Just FYI, be careful of killing the yeast with too hot milk or water. I learned that the hard way! I would warm the milk, put the butter in to melt along with the sugar and let it seriously cool to room temp first.
No need to cool it to room temperature, yeast likes warmth
I remember making and eating these in 6th grade home ec class. They also taught us a brief history of the recipe.
Invented at the Parker House Hotel in Boston in the 1870's. Ho Chi Minh probably ate a few as he worked there in the 1920's. Fannie Farmer had the recipe in an early cookbook. You’re in good company Chef John……

Got up early this am and made them so they be teddy for tonight’s dinner. Then didn’t disappoint. I paired them with fillet Mignon, creamed peas and sautéed summer squash …still, the Parker rolls were the star attraction 😊😋

They make great Thanksgiving leftover sandwiches. Load 'em up with turkey and stuffing and then just dip them right in gravy.
I just did the rosemary/honey rolls minus the rosemary and it was sooo soft and yummy

Can you do a video on where you store all your pots, pans, and appliances? I have about as much cabinet space as anyone else but no room for hardly anything. Would love to get that Kitchen aid but the cabinet where it might fit has 2 All-clad pans and 1 enameled cast iron skillet. I'd love to see where and how you store your pans so they don't get scratched or dented. Love your videos!
I'll definitely bake them at 350°. I like my rolls soft on the outside.

Naturally there a zillion other breads to serve with dinner. That said PH rolls are just so eggy delicious they still make my eyeballs roll back with pleasure even seeing them.
I want to make these rolls. My question is can I make them up to the point before I have to bake them and freeze them or do I bake and freeze for the holidays?

You say de-gas the dough, in my childhood in UK we used to say “knock back the dough”, which sounded sort of satisfying….
