When I was in grade school our head cook made the best rolls I have eaten to this day. She said it was a family recipe. Made the best spaghetti too. She was amazing. I'll say yours is good too
In south Texas and Louisiana for me... we always called them hot rolls. Then when I moved up north for the rest of high school they didn't have anything close to our southern lunches. No hot rolls, white gravy or chicken fried chicken.

Tony, Great video. Very professional. My aunt taught me how my grandmother would make dinner rolls. Her measurement were pinch, and hand fulls of flour and sugar and salt. She would eye her butter. But they look great.
Ages ago, they only had their hands, large batch mixers weren't a thing when I was in grade school. Yes, you can use your stand mixer, with the dough hook. Cut the kneading time in 1/2 or until you see the dough and butter all mixed together and the sides of the bowl are 'clean' of dough.
Yes, on low with the dough hook, when the dough is smooth and elastic, stop, shape the dough into a ball and place the dough in a greased bowl for proofing.
Hi Sonya, just follow the steps in the video....after you mix in all the flour use your hands to mix in all the dough. Once mixed, create a ball, cover with a warm wet towel and let double in size, about 40 mins. After you add in the butter, knead for about 5 mins. Let it rest on the work surface then roll out to start making the rolls.

I love the recipe, but I didn’t read on how much I had to set aside for the sugar or salt unless I missed that part. Can you clarify how much of each I need to set aside. Thanks
Hey! You can hold back all but about a tablespoon of the sugar about a teaspoon of the salt. You may not get the same sweetness but the texture will be very close to the actual end product if you use the full amounts.
I thought that adding the salt into the yeast solution would hinder dough rising. Shouldn’t the sugar be used at that step instead and the salt put in the flour mixture?
Salt does impact the yeast but because the amount of yeast used it doesn't kill all of the yeast off. If you wait to add in the salt when you start kneading by hand, it'll still work.
Do you use measurements ? I've watched a couple times now and I'm not seeing any measurements. How much water ? How much sugar ? How much milk ? I did see 1 egg....how much flour ? How much shortening or butter ? 1 package of yeast ? I'd like to try these...

Here in California, I'm told, it was rare to see a hot roll in a school lunch. Mostly it was a slice of white bread - yuk!

For me, I like to use a whisk or fork to aerate the flour a bit then dip the cup into it if I'm not weighing out the flour on a scale.
