- Ingredients:
250g Skinless pork belly strips
950g Long eggplant
8g Chopped ginger
12g Chopped garlic
45g Chopped Red shallots
20g Sliced spring onions
35g Salted fish cubes
1 tbsp Shaoshing wine
1 tsp Potato starch slurry
Marination:
1/2 tbsp Shaoshing wine
1 tsp Light soy sauce
1/8 tsp White pepper powder
1/2 tbsp Potato starch
Sauce:
150ml Warm water
2 tbsp Shaoshing wine
2 tbsp Oyster sauce
15g Yellow rock sugar
1 tsp Chilli bean sauce (Taban Djan)
1 tsp Light soy sauce
1/2 tbsp Chinese black vinegar
1/2 tbsp Dark soy sauce
Few drops Sesame oil
1/8 tsp White pepper powder
1/2 tsp Flounder fish powder
1/2 tsp Chicken powder

I've made something similar to this but used fish sauce and steamed the eggplant. Everything else was the same.
