Homemade Braised Duck with Plum Sauce | Soft and Tender

  • Ingredients:
    1.8kg Whole duck
    2.5tbsp Dark soy sauce
    Seasoning:
    1/2 tbsp Onion powder
    1/2 tbsp Garlic powder
    1 tsp Ginger powder
    1/4 tsp Chinese 5 spice powder
    1/2 tsp Chicken powder
    1/2 tsp Salt
    Sauce:
    90g Chopped red shallots
    25g Sliced garlic
    20g Crushed ginger
    4/5 nos Pickled plum
    3 tbsp Brown sugar
    50g Yellow rock sugar
    1 stick Cinnamon
    4 pieces Bay leaf
    1/2 no Mandarin peel
    3.5 tbsp Plum sauce
    3 tbsp Light soy sauce
    2 tbsp Shaoshing wine
    1/2 tbsp Mushroom superior dark soy sauce
    1/8 tsp Sesame oil
    1 litre Water

    One question, when does the Mandarin peel go in? I can't seem to see it in the video 😅

      Thanks for watching! Pop it in when you place in the cinnamon stick etc. Apologies for not mentioning it after the rock sugar, must have forgotten but you can see the mandarin peel floating at 8:51. Thank you!🙏
