1.4kg Beef flank
10nos Cloves
1/2tsp Szechuan peppercorns
2nos Star anise
4g Mandarin peel
20g Crushed ginger
2g Cinnamon stick
2litres Water
Rendang Paste:
1/2tsp Toasted cumin seeds
1/4tsp Toasted fennel seeds
3g Toasted coriander seeds
10nos Cloves
2nos Star anise
1no Cinnamon stick
3g Toasted cardamon seeds
15g Pre-soaked dried red chillies
30g Candle nuts
5g Sliced tumeric
30g Seeded red cut chillies
20g Sliced garlic
20g Sliced ginger
30g Galangal
150g Chopped red shallots
3 stalks Lemongrass
120ml Water
100ml Rapeseed oil
1/2tbsp Tamarind paste
200ml Beef stock
250ml Coconut milk
65g Palm sugar
2tsp Salt
2tsp Chicken powder
3pieces Lime leaves
15g Toasted desiccated coconut
