Hi Ling, I just cooked a whole roast duck following this recipe and it came out absolutely delicious! I couldn’t air dry the duck as i don’t have any hooks or places to hang the duck, so I put it in the fridge to dry overnight on a baking rack. The skin of the duck didn’t come out too crispy but it was still really delicious! I probably would reduce the amount of hoisin sauce used to marinade the duck by a lot, though. I find that the sauce mostly came out/dripped down with the fat and got burnt. Probably would still tastle delicious with only a little bit as most ended up discarded. Also i didnt have the red chinese vinegar so I just used rice wine vinegar and it was yummy too. Thanks for the recipe!
Followed your recipe but omitted the steps of boiling in Chinese red vinegar and hang dry. Still came out yummy.. This will be my goto roast duck seasoning now.
Your recipe is pretty similar to the one I obtained from a Cantonese BBQ master over 3 decades ago. His recipe was passed down from his time apprenticing in Canton and subsequently used in his Hong Kong BBQ outlet for over 25 years! Some differences include the addition of chopped shallots and scallions to the ginger/garlic/ star anise stuffing.....noticeable enhancement in flavour profile of both duck carcass and cooked marinade! The other is the addition of Chinese rice wine to the skin preparation liquids in lieu of some of the water!

This is the best home recipe that matches commercial restaurants and traditional cooking techniques I have ever seen. The overnight drying is what makes it superior to any others. Looks so delicious, I will eat the other half. 😂 Your family is fortunate to have you cooking for them. 🥰👍
Wow what a gorgeous wonderful looking duck, I am truly impressed by the way you cooked it. After spending a few months in the middle of San Francisco working at the VA hospital upgrading the total system at each bed. That also was a great time and I met some really awesome people. Soon after arriving in SF I became a huge fan of the taste of duck and I have been craving duck off and on for the past two years. While shopping at Walmart for food I saw a whole bunch of frozen duck. Lol so being me I just had to get a couple of them dude's and see how it went just using my oven. I did deep fry about five of them a few years back like frying Turkey..... I just wanted to find out how to get a Chinese cooked flavor duck. So I have to finish with my duck prep and tell everyone to come back tomorrow...... a few of my family members already said a few things about taking 24 + to make a really good tasting duck..... I will never admit to it. In this house it's all about making Dad eat crow!!! This time it's going to be nothing but DUCK fowl. God bless and good night
Fail proof!!! Tried it for the first time and it came out beautiful!!! The skin, the flavor, the color. Thank you Ling. I hung it for like 30 min to air dry it a bit. But I find it unnecessary and being the food borne illness factor, I don't think hanging any raw meat for more than a few hours is a smart idea. Though it seems like many ppl do this and haven't gotten sick, so just call me OCD. My logic is back in the days, people don't have heat, so it can be pretty cold hanging the duck to dry. With our home constantly warm at 70F, not a good idea. So I just stuck it in the fridge uncovered for 2 to 3 days on a rack and let it air dry that way -- it does wonders - I've dried mushrooms this way rather than risk humidity ruining food. Other than that -- this is perfect! I mimic Ling's baking rack hack by using another cookie dry rack that has an adjustable leg and placed the duck in an angle like Ling did. The higher the angle, the more even colors on both side.

Thank you Ling! I have tried many recipes with dubious results until I found yours. Imagine that. A great Chinese recipe from Down Unda! Lol. I am so proud I wish it is possible to include pics (posted on FB)😋😋. A couple of suggestions: 1) It may be easier to blanch the duck bathing it in a pot of vinegar-maltose mixture than ladeling on a hanging duck. May have more uniform result. 2) I used a fan to assist in air drying. 3) Cut off the wings leaving only the drumlettes on the duck for roasting. The winglettes and tips get too dry from roasting. They would be better served as "low sui" soya marinade wings. I will be adjusting the spice blend to micmic the taste of a local favorite bbq place. Thanks and keep well.

The only thing that I did do different is, I pumped it up with an air pump like you do a picking style duck to separate the skin
