INGREDIENTS
3 large eggs at room temperature
1 teaspoon (5mL) vanilla extract
1 teaspoon (5mL) lemon extract
zest of 1 lemon
¼ cup (60g) sour cream or greek yogurt
¼ cup (50g) granulated sweetener (I usedd Lakanto)
2 tablespoons (30g) melted unsalted butter
⅓ cup (65g) blanched almond flour
⅓ cup (37g) coconut flour
1 teaspoon (4g) baking powder
¼ teaspoon (1g) salt
½ cup (85g) fresh blueberries
3 tablespoons (21g) coconut flour
3 tablespoons (35g) Lakanto monkfruit sweetener
½ teaspoon (1.5g) cinnamon powder
2 tablespoons (30g) softened unsalted butter
⅓ cup (50g) chopped pecans
(Optional)
2 ounces (60g) cream cheese at room temperature
2 tablespoons (25g) powdered sweetener (I used Lakanto)
½ teaspoon (3mL) lemon extract
2-3 tablespoons (30-45mL) heavy whipping cream at room temperature
Bake at 325°F (163°C) for 30-35 minutes or until toothpick is clean when inserted and top is golden brown.
Yields 8 servings

I made this coffee cake tonight. It is fabulous! I used a 6” cake pan with removable bottom because I didn’t have a small springform pan. This cinnamon pecan crumb topping is the best ever!

Simply lovely! Happy easter, by the way. I really appreciate all the time and thought you put into your recipes, they are so cute, and all look pretty delectable aswell. I am not actually on a diet, but when I make desserts, I like to look for a healthier option. If it is not to much trouble, I would really like a good cut out cookie recipe, that I can frost( I want to make little goose cookies) I do not mean today, but maybe, whenever you are up for the challenge. I am a little weary when it comes to Healthier desert recipes, because sometimes they can be... Not great, but if you were to make one, I would most definitely try it, at least. I trust your skills slight more than others... Thank you for your time, and again, Happy easter!

May I ask, why you're using the monk fruit sweetener in this recipe as opposed to your usual?
