INGREDIENTS
¼ cup (60mL) unsweetened almond milk at room temperature or water
3 teaspoons (4g) or more espresso or instant coffee
5 large egg yolks at room temperature
1 teaspoon (5mL) vanilla extract
¼ cup (60mL) avocado oil or any oil of choice
1 cup (100g) blanched almond flour
½ tablespoon (4g) unsweetened Dutch process cocoa powder
pinch of salt
½ teaspoon (2g) baking powder
5 large egg whites
¼ teaspoon (1g) cream of tartar or ½ teaspoon lemon juice
½ cup (100g) granulated erythritol
1 tablespoon (15mL) water
3 teaspoons (4g) or more espresso or instant coffee
1 teaspoon (5mL) vanilla extract
2 cups (480mL) chilled heavy whipping cream
¾ cup (150g) powdered sweetener
Bake at 335°F (168°C) for 18-22 minutes.
-Let the cake cool for 10 mins before adding the filling and rolling the cake.
Yields 10 servings
