    This looks really good. I'm wondering though....instead of doing the layers; if you just mixed everything together and baked it into a cake (except for the streusel topping) how it would be.

      You can do that but you wouldn't be able to taste the distinct flavors. The cream cheese layer would most likely get absorbed by the flour.

    Looks delicious, can’t wait to try this one! Do you use a fork or something to go around the edges of the cake before baking? It looked like it had ridges and was away from the pan slightly. Just curious. Txs

      I use a butter knife and go around the edges of the cake to pull it slightly away from the sides. It makes it easier to remove once it's done baking

      Thank you. No you did not miss the coffee. 😉 There is no literal coffee in most coffee cakes. They call them coffee cakes because people often eat them while drinking a cup of coffee.

      You're welcome. I am so glad you found my channel. Unfortunately coconut flour cannot be substituted with any other flour it is very absorbent and requires a lot more liquid and binders.

    Janet I love this recipe I just went to Costco with my sister and I got a huge bag of blueberries are frozen so I was going to ask you can you put the blueberries Frozen or do you have to thaw it out and then put it in your batter it looks so good I've got to try this one but can you let me know oh and what size pan

    Just found you, can't wait to try this! I'm wondering if you prefer yogurt or sour cream. I noticed the carrot cake recipe & it always says yogurt or optional sour cream.

      I almost always prefer sour cream. It's thicker and has more binding power. Yogurt is lower in fat so some people prefer it over sour cream

    Although this is much more labor-intensive than I would generally do, I couldn't resist making it. The cake batter was very sticky & wet, maybe because I'm in Florida, so I kept adding coconut flour, one tea strainer at a time. I'm guessing I added 1/3 to 1/2 cup. It's in the oven now & the aroma is killing me! I just can't wait to see how it turns out because I rarely use coconut flour. Each part was delicious raw, so I can only imagine! Thank you, Janet!💝

      No unfortunately coconut flour cannot be substituted with any other flour. It is very absorbent and requires a lot more liquid and binders than other flour

    Hello hun, I just happened to have run across your channel. I do have a question? Since I am new to Keto and artificial sweeteners do normally have an aftertaste. I’m hoping that’s not the case with the brands you use before I go get some?

      The monkfruit sweetener does not have an aftertaste when used in small amounts. The best keto sweetener with absolutely no aftertaste is allulose. However it is not always a one for one substitute and tends to give the recipe a softer texture which is ok in some cases.

      there is no actual coffee in most coffee cakes. They call them coffee cakes because traditionally people eat them while drinking a cup of coffee.

      Yes you can but dried blueberries contain more sugar than fresh so it will make this low carb but not keto

      When I am making a frosting or smooth filling I have to use a lot of powdered sweetener so I use a blend because it eliminates any aftertaste

      There actually is no coffee in most coffee cakes. 😆 They're called coffee cakes because generally people eat them with a cup of coffee.
