This is very interesting and looks like something I would love to make! Question: I wonder if coconut flour (which is very desiccated, finely milled coconut that has been defatted) would work instead of desiccated coconut? I think the amount would need to be lower, as when we grind things they can reduce in volume. In the US it is just so much easier to find coconut flour and I definitely love the finer texture.
@@RM-gp4ur Desiccated coconut has a chewier texture and stronger coconut flavor, while coconut flour has a just powder-like texture, it’s no longer has the natural fat content of the desiccated variety

In your situation I think savoury cakes are more suitable for you. Adding more plant-based foods to your diet can lower your LDL (low-density lipoprotein) cholesterol. Keto diet is suitable for you. Check my savoury spicy carrot cake 😊
There must be a mistake in the recipe, 2 tbsp of baking soda is too much, it would be sour, but also 2 tsp of baking soda would be too much, unless you meant baking powder.

I made a coconut cake a like this few months back, and it was a total disaster. Yours looks amazing! Mine came out looking like it had a bad hair day. I definitely need to redo my video and show I can bake a cake that does not need a makeover. :(
