    Hi: In any recipe that calls for half or one cup of honey, lightly coat the measuring cup with olive oil or your oil of choice then measure the honey. When you pour out the honey, every last drop of it will pour out with no sticky mess. I've done this with tablespoons and teaspoons, too. Works like a charm and clean up is easy peasy.

      Ohh I love this comment! I have done that before when baking: I'll first measure the coconut oil and then the maple syrup or any other liquid! It works great!

      I'd prefer weight measurements and forgo the need for a measuring cup completely!

    This is awesome! I can make my own marshmallows now. I can’t seem to find any in stores including Trader Joe’s nor Whole Foods without carrageenan. Since I had colon cancer I try to stay away from it. So thanks so much for the recipe!!!

      Yes! Many don't know that store-bought marshmallows can contain gluten as well. So much better to make at home. Hope you enjoy it! :)

    If you absolutely can't have any sugar at all, can you substitute the powdered sugar with rice milk powder? I think I will try that instead. My Mom absolutely loves marshmallows, but she can't have any sugar at all. She uses honey moderately, and these marshmallows would be heavenly for her!

    Just great! Speedy recipe really who will not raid the cooling, perfectly tempting Mallows!! Next comes the rice crispy treats!
    (The kids will be pumping cereal into your just blended concoction and watching Scooby Doo with innocent faces when asked how did half pan disappear !)

    I tried to make this beautiful recipe, but I only have a 5 speed mixer, it sort off came out like this, not as thick and mine never made stiff peaks even after 5 minutes at the 5th speed. Still delicious, though.

      They'll stay good for a week or so, but I think they're best eaten in the first day or two. :) Just keep them in a sealed container on the counter (not in the fridge).

    Hi! I’ve made this with my kids with honey one time and maple syrup the other time.. both were delicious! I was wondering if I can replace honey or maple syrup with monk fruit sweetener since it’s low on glycemic index (my oldest son has adhd)

    unflavoured gelatine makes everything stinky. is it normal?

      I've never had that problem, though I use Vital Proteins gelatine. The brand of gelatine you use may be different. If you'd like to use a flavored gelatine, I don't see a problem with that. :)

    How could I adapt this recipe to be spreadable? More like a thick fluff?

      The gelatin makes it firm up, so if you want a thick fluff, don't use gelatin.

    Used half honey, half maple syrup. Had to cook over low heat because the mixture boils over super easily. It took over an hour for it to come to temp, and the end result did not taste good at all. Waste of ingredients and time. I’ll just go back to making it the reliable, “unhealthy” way.

      Sorry to hear you didn't enjoy this recipe. But that's strange about how long it took for the sugar to come to temperature - as it should only takes 15 minutes max.

      Thank you for your prompt reply.
      The mixture was very temperamental for me. I couldn’t cook it on anything higher than low heat, which is probably why it took so long. But when I turned the heat up any higher, it would start to boil over.
      I apologize for the negative tone of my initial comment. Your calm response helped to diffuse my frustration.
