6 ounces (3/4 cup) (170 g) corn syrup (or honey, golden syrup or maple syrup)
2 ounces (1/4 cup) (56 g) honey (or corn syrup)

It's actually surprising how easy marshmallows are to make at home - I made them one year as a gift when I was on a very tight budget and I think it's still probably one of the best-received gifts that I ever gave to people.
Edit: It always puzzles me to see comments where people expressing surprise/horror about how much sugar is involved in making candy. I'm honestly not sure what some people think candy is made from! LOL
Yes! Nothing is more irritating than Karen coming and nit picking the ingredients in the video, WHY ARE YOU HERE?! WHY ARE YOU EVEN WATCHING IF YOU KNOW SO MUCH?! Just like the people who give a recipe 1 star reviews and then go on to list all the substitutions and deviations they took. YOUR recipe sucked, you didnt make THIS.
I have been making marshmallows for many years. (Over 40 years!) The only difference is that the recipe I use does not use the corn syrup. Summertime the stores used to come out with toasted coconut coated marshmallows. So, I toast coconut and roll mine in that. It is a winner! Nothing compares to the homemade marshmallow. (My recipe came from the "Farm Journal Homemade Candy Cookbook". I hope everyone tries them.
Would you have a recipe that uses gelatin sheets at all please? In the UK we tend to have sheets not granules of gelatin and I've found it so hard to convert successfully as all recipes use granules! (gold 200 bloom is the standard type)
@@annabizaro-doo-dah check UA-cam marshmallow recipe from Emma's Goodies, I think she uses gelatin sheets!
@@chloe.cordeiro Thank you so much!
Whats the recipe with no corn dyrup?
OP agree - old timey recipe without corn syrup/glucose & rolled in toasted coconut - the best.
Thank you so much. I've just watched what feels like 700 videos on marshmallows and finally someone said how long it takes for gelatine to "bloom".
Plus you're style is very watchable. Unlike some who seem to go for the "doouchie super bowl voice over I'm way too enthusiastic and need to be slapped" voice lol
My family has been in the candy business for nearly 100 years. You can stir the batch and much as you want, it will not turn to sugar. You much wash the sides of the pot down with hot water periodically however.
Generally after the sugar has dissolved we generally don't stir it because there is no need.
Love making homemade marshmallows. I offer them thru my business, Kathy's Kernels. I use a large pizza cutter to cut the length of the marshmallows. Then I use scissors to cut each individual square. I also roll then in powder sugar and put 2 at a time in a sieve and shake the excess sugar off. Works like a charm. Thanks for the video!
Love how you explained about the the water needing to evaporate before the temp can rise.
My kids asking this morning how are marshmallows made while sipping on their hot cocoa, so here we are. This was such a great video for my kiddoes. I knew in the first 1 or 2 minutes that you went to culinary school. Bench scrapers are simply the best, I use them a lot. I love the make-up brush idea and will definitely be adding that to my chefs bag. 👏🏻👏🏻. So we subscribed to your channel and are looking forward to watching all the good things you make.
Love how you explain what you do and why you do it. Makes a click happen upstairs that I wouldn’t of made myself without your explanation. Lol. Usually in Recipes, I do what they say but don’t know why I do so it’s a good change! Super interesting also!
This is the first time you appeared in my feed. I’m glad you did. It was a great video to watch and I did subscribe to your channel.
I just made marshmallows and it's true: They disappear in your mouth and they taste AMAZING. I actually made them for my kids, sorta like a project. I don't like marshmallows at all, at least the store bought ones. But THESE marshmallows are DE 👏🏼LI 👏🏼CIOUS lol. Despite the sugar, corn syrup and honey (I used maple) you can hardly taste it because it just melts in your mouth. Thank you Liz, for another winner recipe ❤️🙏🏼
I always loved making treat boxes for my friends at the holidays. I think I have some new things to include now!
I've watched several marshmallow tutorials and yours is BY FAR the best.
I LOVE that you can see the flecks of vanilla bean. OMG.

I love that you talk about substitutions
Just tried your recipe! Amazing! I added matcha powder to my gelatin mixture and the flavour/texture of these marshmallows is insanely good!!!! I used maple syrup instead of honey and didn't add vanilla so the matcha flavour really stands out
That sounds delicious!!
I have made homemade marshmallows for years now. My recipe came from an old "Farm Journal" cookbook. There is no comparison to store bought marshmallows. I rolled mine in toasted coconut. Much better than the ones in the stores. Hope you all try them.

Would love to know how to store them and how long they're good for 😋 Thank You so much! I'm going to tru doing some today!
Anisor Fernandez you can let them sit out for 2 days to develop a skin, and then store them in an airtight container in the fridge or freezer. They really can last for years!
@@SugarGeekShow great question and thank you for answering so fast,
I agree with her. Your prompt reply is awesome for sharing too
@@SugarGeekShow I find that, at my house, they last a lot longer if I hide them. My dad has some that I made him last Christmas. They're still pretty good!
@@laurieshaw5441 Fort Knox couldn’t keep them safe with my crew around. But to tell the truth how could I hide them from myself? 😂
I just tried it now and it is amazing. I followed all the steps and added some strawberry flavour 😘 thank you for the great recipe

I’m so glad you showed up on my feed! As you were putting powdered sugar on the marshmallows I was thinking you needed to dip them in chocolate LOL and then you did! As you were cutting up the chocolate my mouth was watering 😋
Awesome...my granddaughter loves marshmallows! I will make her some for Christmas
I learned so much. Thank you
I’m watching this 2 yrs later and this is the best tutorial for homemade marshmallows. Thank you so much because I would’ve made so many mistakes watching the other videos.
Really enjoyed this thank you! I'm in oregon too!
Now, that I am a Grandmother, l no longer make Marshmallows... I make “Nanny-Mellows”. They were officially renamed by my eldest Grandchild back in 2008 when he was six. I have tinted my Mellows, used all kinds of extracts... l have even cut them with metal cookie cutters. It’s not easy cutting out Star shaped Mellows! 🤦🏻♀️ l also love to dip them in Dark Chocolate. (It’s easier if you only dip 2/3 of your Mellow into the chocolate.)
I’ve been “Binge” watching your videos for a couple of hours now and you had me in stitches with this one. Thank You from the bottom of my heart! ♥️
I’ve never seen a Bosh mixer. My first visit to your blog. I’ll be back.
I love it! You remind me of myself. Everyone should have a homemade marshmallow. They are so flipping good. I made some a few years ago to everyone's amazement. Well worth the effort. I did not use honey, so I may have to do that (I'm a bit of a honey freak).
That mixer is amazing 🤩
Thank you so much. I got hooked on your tutorials from one hot chocolate bomb recipe that I wasn't even looking for. You have a huge fan in me just from one simple recipe.
These look delicious.

the science of cooking!!!!!! YES!!!!! Thank you!
We love our science around here!! 🥰
My grand kids are going to love them
Love the use of our Cutco knives.
Oh those look sooooo good 😋
I made marshmallows often for kiddos at our church. My recipe is different from most as I only use sugar, salt, gelatine, water and vanilla. I make a coating using powdered sugar and corn starch. My husband and grandkids like mine but not store bought!! Glad your site came on my feed tonight.
Made ‘em! Made mint and used a 13x9 pan. Couldn’t imagine in a 9x9. They had to be huge!
Huge is good for marshmallows. ;)
My marshmallow prayers answered!!!!👍🏼👍🏼👍🏼👍🏼👍🏼I just know you’re gonna have tons of tips. I can’t wait 😁 🙏🏻

Hi Liz,

Thanks so much for all the detail! I've made marshmallows using my KitchenAid, but wondering - do you think I could make them in my Bosch with the plastic bowl? I don't have the metal bowl for my Bosch.
Hello. Great Video. Question would you happen to have a recipe for a half sheet tray.
