I tried the recipe and it was ok. I can say that the taste is actually there. You can 100 percent taste marshmallows. The structure and how it holds out in real life? Not so much. They are very moist to say the least, hence why you have to cover them in so munch powder sugar, and even so, it gets soaked right in. They don’t stay stabilized at room temperature. They will begin to melt and decompose. This treat is more like a “do it and use right away” recipe. Pretty tasty though.

Turns out they stop melting if you put them in the fridge! @Make It Dairy Free please could you update the instructions on your website?
You should leave them to form at room temperature, and then the next day cover them in sugar/starch then store in the fridge, with a layer of sugar/starch over the bottom of your container. Ideally they'd be covered just before eating instead, but that's too much effort I'd much rather do it this way :)
Are you sure you cooked the sugar to the right temperature? What you're describing sounds like undercooked sugar

My husband has tried making vegan marshmallows, but could never get it to work. Maybe I can get him to try your recipe! 😍

Tried making this twice, and the sugar kept burning before reaching 230F. I am guessing the agar mix heats up too much before the sugar reaches temp. The second time, we decided to just mix it into the aquafaba foam anyways, and the dark sugar solidified immediately.
I recommend adding a specific temperature for the agar mix, rather than "medium heat". A temperature to keep track of it during the whole process wouldve made this recipe more foolproof.

I’m glad someone else had issues with this recipe. Agree with your comments on the temperature problem. It’s definitely questionable, and the end product is just not good. The texture is odd, and not very marshmallow-like. And I’m even vegan. I think there are probably better recipes out there, so this one is a pass for me. I’m guessing that most of the likes on this video are for the showmanship and not the actual marshmallow, which probably no one has actually tried making.

Not saying don’t try the recipes but dandies vegan marshmallows are excellent and not the hardest thing to find. May depend on location but all whole foods have, some of my stop n shops have, and trader joe’s has them seasonally under the trader joe’s brand. Im sure they have a store locator on their site. Walmart has their own vegan mallows now but ive not tried yet.

For those new to the channel, the written recipe is in the description. I’m curious how they’d do in a sweet potato casserole. And i see date syrup would work as an alternative. What about date molasses? Would that be too thick?

I have a goto vegan marshmallows recipe that I make regularly, but I will try yours as well.
I let my marshmallows dry over night before eating them. That is extra important when making rice crispy treats from them!
When did you add the agar-agar mixture to the fluff? Before or after the sugar+syrup?
he made the agar mixture then added the sugar on top of it to make one mixture then added it to the meringue once the right temperature

My once mild gelatin allergy has gotten extremely bad to even pork is triggering it. So I'm having to write off pork from my diet because of it.
