Italian Grandma Makes Baccala with Potatoes and Mushrooms (Dried & Salted Cod Fish)

- Baccala with Potatoes and Mushrooms (Dried & Salted Cod Fish):
Olive Oil
1 medium Yellow Onion, chopped
3 cloves Garlic, minced
16 ounces Mushrooms, sliced
Salt & Black Pepper, to taste
Hot Red Pepper Flakes, to taste
5 medium Russet Potatoes, large cubes
2 cups Peeled Tomatoes
Water (enough to cover fish)
2-3 pounds Baccala* (dry weight), cut into serving portion sizes
1 ½ cups All Purpose Flour
½ - 1 cup pitted Green Olives, sliced in half
½ cup Fennel Fronds
* Can substitute baccala with fresh cod or any firm fish.
Serve with crusty Italian Bread!

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

She worked in her garden & brought it in to cool. The guys would hunt & fish, so everything was fresh. How I miss that. Gina is a gift & so refreshing. It’s great that they make these videos of her. I just love her so. She's bubbly and enthusiastic as a child and at the same time she's so gentle and conscientious. How does she do it? She's such a rare treasure!
MY uncle and me used to get in trouble for getting into the wooden barrel of salted cod in the basement of the house in Sheeps Head Bay NY. my aunt on the third floor would yell at us saying she could smell the fish all the way upstairs. Funny things we remember 70 years later.

Watching Grandma Gina cook, laugh, sing and telling stories of her childhood gives me such great pleasure especially coming from an Italian family myself. I lived in a Brooklyn brownstone in an Italian neighborhood (before gentrification and hipsters moving in) and the local shops sold baccala ( salt cod) in baskets.Very stiff with salt preserving them.Always served at New Years! So much great Italian food there.Fresh bread every morning at bakeries, pastries, Italian delis, family owned grocers. HEAVEN!
They sold it in barrels in the supermarket in Manhattan, so I tried it once. Someone told me to soak and change the water. I did, so many times, and it was still nothing but salt. Maybe I didn't do the third day? I never tried it again. But in the 1980s, I could buy a pound of many kinds of frozen fish in a box in the market; no brand name, but all different kinds. I used to buy haddock and perch or snapper.
Well, this was an especially beautiful episode. Not only is this dish nice and I can't wait to cook it, but the end had me in tears with the love and gratitude to her son in law and the memory of his Mom. God bless you and your family, Gina. ❤

Bella Gina! I love bacala recipe. I can only image how delicious it is. I make bacala like my mother taught me. My family is from Reggio Calabria so we don’t fry the potatoes and flour the fish. I don't know if you remember me posting about how my mother's father was from Foggia and her mother was from Abruzzi...and how you cook so similarly to my mom who stopped cooking when she hit her 90's. Sadly Gina, my mom passed away in September. 😞 She would have been 98 on December 26. You singing "Mama" brought tears to my eyes because I felt it was a sign from my mom. She used to sing it about her mom.
She always made baccala, especially for Christmas Eve. I am going to try this recipe. Looks so good! Thanks again for keeping all of us in the loop for some great Italian cooking! I may not have my mom here anymore but so grateful I have you!💖😁

My grandma used to make a salad out of baccala. After rehydrating it like you describe, she would chunk it up and make salad with onion, olive oil and vinegar.

Gina, you remind me of my mother especially when you sing. My mother and father from Sicily and I got to know my heritage and know the cooking as that was very important in an Italian family. Children must know how to cook clean do their laundry to know that they can look after themselves. It was standard that the children was not able to have a relationship with anyone until they learn these things. Especially the girls learning to cook. I have experienced all of that.
