Creamed Codfish - from salted cod - Bonita's Kitchen

    Today we will be making Creamed Codfish - from salted cod! So tasty and topped with Colman's Dry Mustard! Please see recipe below!

    Serves 6 Hearty Appetites
    Ingredients:
    1½ to 2 pounds salted cod
    3 Tbsp butter ( and extra for serving with meal )
    4 cups whole milk or evaporated milk
    1 medium chopped onion
    ½ cup vegetable broth from boiled potatoes
    4 to 5 tbsp flour ( cornstarch if needed )
    ½ tsp pepper
    Method:
    Soak salted cod for 4 hours (change water twice).
    Bring cod to a simmer NOT BOIL for 2 to 3 minutes - drain water - bring to simmer again 2 to 3 minutes.
    Flake cod (it will separate naturally). REMOVE ANY SILVER SKIN and bones.
    In large frying pan sauté medium onion that has been finely chopped with butter until very soft. Then add whole milk or evaporated milk to the pot, except 1 cup.
    Bring milk/butter/onion mixture to a simmer. Add fresh ground black or white pepper to taste. Add flaked codfish.
    In a bowl or mason jar, add 4 or 5 tablespoons of flour to the remaining 1 cup of milk and whisk together to get a thick creamy thickening agent (or rue).
    Slowly pour the rue into the simmering pot while stirring. Stir until desired consistency.
    If finished creamed codfish appears to thick - add a little more milk to regain desired
    consistency, or vegetable broth from potatoes.
    Serve with boiled potatoes.
    Bonita’s Tips:
    Spoon over boiled potatoes and top with a pat of butter.
    Sprinkle with COLMAN’S DRY MUSTARD for TRADITIONAL flavour.

    My friend you have just made my day!! I've been looking for this recipe for over 40yrs now,my father used to make this quite often but never saw him making it,he used to put a can of peas+carrots in his,I remember it being served on biscuits or toast,thank you so much for bringing back a childhood memory!!!

    Hello Bonita I am Portuguese that is are specialty making codfish recipes we have more than 100 recipes I have one almost like that but it’s made with french fries and we use a lot of olive oil I remember my father used to go fishing to Newfoundland from the Azores islands I was brought up but salt codfish Thank you for the recipe I enjoy your recipes special making the bread thank you so much I live in Canada now in Winnipeg Manitoba

    This is delicious! And you're right - the Colman's dry mustard is a game changer, takes it to the next level! I added 1/2 cup of crumpled bacon, ooohh heaven.

    Hi, Bonita. I make this cream sauce whenever I have salt fish with brewis or potatoes. I don't put the cod in the sauce but that is a great idea.

    I love the super potatoes and I also like it over white toast. I’ve never tried it with the Colemans mustard, but I have had it with tarragon or a little bit of lemon zest. I am certainly going to try Chris’s version soon.

    This looks wonderful and simple enough I may even give it a go. One of my late father's favorites was Creamed Finnan Haddie. I believe it came to the New World from Scotland and was popular in Canada and New England and probably anywhere the sea was a food source. I've never seen a recipe that hasn't tried to make it "haute cuisine" with fresh haddock fillets and liquid smoke [Lord, save us]. Have you ever made it? I'm sure your approach would be the closest to how it should be done. Thank you for all your hard work and no-nonsense approach to what should not be all that mysterious!

      jayplays Thank you for your message and for stopping by, like I can remember hearing about this recipe before and it may be called something different here in Newfoundland Canada. Of Course we live on a Island here in Newfoundland and it's all about seafood, our back ground is Irish decent. This recipe is so good and anything with salted fish in it I'm all in for sure, but even fresh haddock would be nice in this with a pinch of sea salt to give its that salted taste.     Like Anita, mom use to make this with fish and brewis and potatoes and of course scrunchins in the sauce. Will have to make it with the mustard powder on top!! Thanks Chris for sending this in.

    This is almost the same recipe I use for making creamed smoked black cod...I use local wild onions instead of store bought and I use farm fresh whole milk,everything else is the same right down to using dry mustard to spice it up when serving...Going to try your recipe out the next time I find salt cod in my local grocery store

    old memories of growing up only we would have trout, and mom would add bits of bacon and peas to it. over potatoes or saltines either way it was really filling;];];];] great job again bonita;];];];]

      No! You can use fresh fish and just salt the hot water when cooking it first. Then follow the recipe for all the other steps. Enjoy Bonita

    Salt cod is scarce here in Ontario, but, I have recently sourced some and will be trying various things with it.

    Looks delicious! I don't always use the salted cod. I use fresh. Does the salted cod give it a different flavour? And I make my roux right in the pan. Flour into the fat, then add the milk. What you made is called a slurry. I'm craving this now. It's excellent with Samphire sautéed in butter and lemon on the side. Hope you had a lovely Mothers Day! xo

You can use fresh cod with this meal of course but salted cod got a different taste because of the aging process in the sea salt over time. Of course we soak all or most of the salt off in water, but you can still taste that flavour. This recipe was a viewers recipe from his family and I didn't want to change the ingredients out of respect for him and his family. :) Bonita

    I really miss the salt cod like I used to get in the grocery stores when I lived near the coast in New England. In the south and west it is virtually unknown.
    Some old timers would refer to your dish as "scouse" or "lobscouse". I am sure you use the same names there, but maybe only for meat dishes and not for fish. Sometimes the sauce would be thickened with ship's biscuits, crackers or even bread, rather than flour.
    Do you ever make "scootin' long the shore"? It is a simple potato, bacon and onion dish that may have a cream sauce.

    This recipe is very similar to the famous portuguese dish called Bachalhau de natas ( creamed codfish translated) ...just goole the recipes
    The few difference is that in Portugal the dry salted codfish is soaked for 2-4 days not hours, then cooked in milk or water with bayleaf . The same milk with fish taste is used in a bechamel sauce made separate (flour and milk and cream ).
    boiled or fried potates are added after the onions and then half the bechamel sauce .. then everything is put in a flat oven dish, the rest of beachame added and sprinkled with cheese and baked for 20 min in oven ... the rest is the same and I bet the taste very similar. have eaten this many times in Portugal and cooked it a few times I will try your dish to see how they compare

      Hi Peter: Thank you so much for your message and for visiting our channel, there are a couple types of salted cod and it is a process. Dry and wet, My dad would make it years ago and have it salting in buckets wth lids. After dry it on the flat rocks or wooden flacks. I don't have a recipe for that because it takes a long time to salt fish, but all they use is dry packed sea salt or course pickling salt and layer the fish fillets. I will see if I can get some info on the amount of salt and how long to keep it in the buckets before drying of freezing them. Bonita

    1 stick butter = 8 tablespoons = 1/2 cup = 4 ounces/110g. = 1/4 pound

    Wow, check out that kitchen decor. Looks like four interior designers - one from the '50s, one from the '60s, one from the '70s, and one from the '80s - all dropped acid and worked on separate sections of the kitchen. The plastic table cloth is the icing on the cake. lol.

    Are you married? lol. My wife gets sick if I even discuss my family breakfast grand cuisine. I Love CCF . The rue: I melt the butter- or oil (less fat) to warm, then stir in the flower until it browns. (1 TBS) I then add skim 6oz. (for one serving) to simmer carefully- add one egg beaten, and the cod, rinsed thrice with still a hint of the salt. Stir while the toast pops, Whip it to me! fresh cod does not seem to work. Thanks!
