4 extra large Eggs
1 cup tepid Water (240ml)
2 tsp Salt (12g)
4 cups All Purpose Unbleached Flour (480g)
plus 2 cups bench flour as needed (240g)
1 cup Semolina Flour (120g)
Grated Pecorino Romano Cheese
Add your favorite sauce and enjoy!
*Fresh Cavatelli can be frozen for up to one month

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

I love all of Nonna Gina's recipes, but this one really touched my heart. I remember as a boy my late nonna, parents and even aunts helping with the homemade cavatelli. There were white sheets of cavatelli drying throughout the house. While the sugo cooked. Oh what I would give to have just one of those days back! Thank you Nonna Gina you are truly a blessing.
I ate Cavatelli on my first date with my now, husband. We will celebrate 25 years in April. I still love both.

This woman is so similar to my own granny, back in Murcia, Spain. She speaka exactly the same way, I mean, about the joy of doing stuff, about her grandchildren and how much they love her meals hahahha I wanna call my granny now to hear her voice... my dear "yaya"
My favorite part is always when she says she is making a small batch just for purposes of demonstration and then proceeds to make enough to feed an army. I’d love to see her definition of a large batch. She’s awesome.

I have watched many many UA-cam videos over the years learning how to cook new things or improve. Hands down, Gina is my VERY FAVORITE. She is fantastic with her skills and knowledge. Her recipes are incredible and loved by all who eat anything she shows me. I just love and adore her. She is precious, wonderful and so full of love and wonder! Now my kids, grandkids, neighbors and friends love her too!

I used to make this with my mother when I was a little boy. The whole trick is the thumb action. My mother made me wash my hands real good before making them.

When I watched her can the tomatoes I cried,, because I use to help my mother make them the same exact way, I wish we had that tomatoe machine, my dad and I use to grind all the tomatoes!!!!
When I seen the shelves of tomatoes the tears really started, our cellar had the same shelves filled, even after my mom passed the shelves where full, until we started to use them up, and little by little they where gone....the family all moved away and no one was left to carry on the tradition....

I can still remember my grandma’s white table cloth covered dining room table opened as far as it would go filled with her fresh cavatelli. Thousands of those tasty little pasta shapes just waiting for Sunday dinner! Gina brings all those wonderful memories back for me. 💕

What a great day-----that's any day when there is a video from Nonna Gina! You brought back so many memories of 55-60 years ago, when I was a little girl, and I would sit and watch my Nonna Immacolata make the cavatelli !!! And I would get so excited when she would let me put my little hands in the well, to bring the eggs and flour together! I used to run away though, when it was time to shape the thousands of cavatelli ! I hated that job. Today we got the extra treat of you singing, and also of speaking a little Italian! Per piacere, please make one video where you speak completely in Italian!! And it never fails, never do you make a video where I don't cry-------but they are always happy tears of happy memories! I am so grateful to have found this channel. I am almost 40 years old now. I was so fortunate to have been able to spend so much time with not only all my grandparents but some of my great grandparents as well. I was so close to them all and learned so much from them. I can pick out parts of my personality that each of them shaped. Listening to and learning from them was no doubt among my best decisions in life. Seems like when i was young many young people dont see the value in learning from our older friends and relatives. Now as an adult it seems that kids are even less interested in things like this. Im very grateful this family for sharing all of this with us on UA-cam. I think its so great that her family takes the time to produce these videos. This information is priceless.

Yep! Gavadeels! Us kids said cavadils. We all gathered around to make them. The adults used their fingers and the kids got a fork to roll them off to make it easier.
I used to make this with my husband and my son when he was little! Brings back memories! My son used to turn the handle of the cavatelli machine and watch it come out! We made it with Ricotta cheese which made them so light! Delicious!!! Thank you Gina for all that you show us how to make. I love your cooking!! You are absolutely wonderful!!

I love the traditional demo so much, but I appreciate the demo using the machine since that is the method I will use. Her singing is sublime, especially since I can't sing to save my life. Her joy when she sings is contagious. I've got to also say that the final dish is to die for! My mouth was watering while watching her eat it. Gina isn't kidding about being loved all over the world for very good and very obvious reasons. What a treasure!

Gina, thank you so much, I’m 67 and you bring back such wonderful memories of my own sweet Italian grandma! My father’s family immigrated from Sicily in the early 1900’s. He was one of 9 children growing up during the depression. Sunday’s and holidays were always spent at grandma’s , boy what a madhouse with all those cousins. She had such patience with us. I've been watching Gina for a few months. She's always reminded me of my great grandma. Then today, I heard her say Faeto! That's where she and my great grandpa where born. Altieri was my maiden name.
My mother in law was named Antonietta Altieri. My father in law was named Angelo Petitti. My maiden name was Spinelli. Do you know your great grandma's maiden name? I would not be surprised to know we are somehow related:)

His parents were Raphael and Donata (Paria). My great grandma's name was Antonetta Prospera Castielli. Her parents were Joseph and Castanza (Perrini). I can't wait to hear back from you to see if we are family! 🥰
Altieri, Castielli, Parrini are all names I remember from Faeto. The Altieri family is part of my husbands family. As I mentioned my mother in law was an Altieri. The Altieri's of my generations have moved to other areas of Italy. I'm sure if we go back a couple of generations we will find our families are distant cousins. You will find many from Faeto over the generations have moved all over the world. Life was difficult in Faeto so they went out in search of a better life. Thank you for watching. The recipes are the kind that grandmothers never write down. Watching her is a life lesson, and makes me feel like I’m spending time with my own grandmother who passed away a few years ago. I miss her dearly, but the love shown here is so similar! I tear up sometimes because it’s so comforting. These are the kinds of lessons that I hope to share with my children and their children some day. Thank you and your family so much for sharing her videos. She’s a true blessing! 🙏🏻

Grandma Gina: that was brilliant. To use the machine to roll and cut fat “fettuccine” that you can then cut the fat strips into pieces to make the small pasta. I love it. Brava.
