    This is one of my favourite dishes that takes me back to my roots !
    A small tip for anyone who can't find the ingredients outside of Iran - you can also use Asian wheat noodles instead of ash noodles
    And if you don't have kashk or don't like it you can use greek yogurt which also makes it delicious !

    Thank you very much for the recipe and well made video! There's two persian restaurants in my town and the ash reshteh is my favorite thing on the menu. I've decided to make it myself based on your video, I even found kashk and I have to say it's not the last time I'm making this! So tasty!

    Thank you Yousef, I made your recipe today and it was so comforting and delicious. I felt the healthiness of all that green and beans making me feel better as I was eating it, and it's so warming too. I couldn't get kashk, so instead I made labne by mixing greek yogurt, salt and lemon juice and hanging the mixture overnight in a muslin cloth held with an elastic band in the top of a big yogurt pot. I then mixed part of the resulting labne back into the liquid resulting from making the labne, and also mixed some crumbled goats feta into it. It worked out delicious with labne and goats cheese also sprinkled on top, but mine was not as beautiful looking as yours! Thank you so much. We are having Persian foods week in our home and I'm so excited to try more recipes. I love all the green herbs and spinach so much.

    I absolutely hate cilantro (coriander) 🤢 but I love my boyfriend and he loves this soup. He can only get it once a year from the Iranian food stall at the local international festival (we live in a very small city). So i want to make this for him. I will tolerate the soapy herb for him lol thank you for the recipe so I can surprise my love with this soup!

    After looking a couple of recipes, I decided yours is more authentic.The only ingredientI didn't use was the Ash, not sure if the flavor really changes. The soup came out great and adding the garlic and fry mint makes a difference. My family love it!!. Thank you

    Dear Yousef, I have bought the frozen vegetables for Ash. It's a pack of 400 grams. But I don't know how to compare that weight to the fresh vegetables that you listed.     I make it and it is very yummy. I used green onion instead of chives. Can you tell me what are chives ? Are chives are called gandana /گندانہ?

    Can I use vinegar to make sour taste and then regular yogurt if I don’t use the whey... I still want the sour and creaminess but don’t have whey.., also thank you for your amazing recipes they are wonderful! I’ve made three so far and lamb and bean stew was delicious!

      You can, but usually, it's one or the other because of the flavor profile.

    Is it okay to add the kashk to the ash? My mom always did that. Some I notice add during serving. I just made this yesterday and added an entire kashk bottle and mixed it to my cooked ash. Yummy

    I think I added too many herbs. I added 125g of Coriander, Dill and parsley as well as about that same for spinach, maybe a little more of the spinach. Wasn't sure how much tumeric so I put in about 2 1/2 tsp as well as pepper and salt. So I have about a gallon of water in with the herbs, how much kashk should I use or is it a "per taste" amount?

      @@CookingWithYousef so it does not contain animal rennet and is suitable for vegetarians,isn't it it?

      @@miramauckisch6412 I'm not sure about that. You can always just not use the Kashk and substitute it for something else when serving. My wife likes to use a little bit of vinegar instead for example.
