Thank you Agha Yousef for this This is one of my favourite dishes that takes me back to my roots ! A small tip for anyone who can't find the ingredients outside of Iran - you can also use Asian wheat noodles instead of ash noodles And if you don't have kashk or don't like it you can use greek yogurt which also makes it delicious !
Thank you very much for the recipe and well made video! There's two persian restaurants in my town and the ash reshteh is my favorite thing on the menu. I've decided to make it myself based on your video, I even found kashk and I have to say it's not the last time I'm making this! So tasty! I might now try your eggplant dip! Thank you for sharing this wonderful culinary culture!
That looks wonderful and extremely healthy. Thank you for sharing your recipe and also for not including music in your video as I find music to be distracting. Cheers from Australia 🥰
I always wanted to make Ashe reshte like my mother did and I'm truly thankful for you for teaching me this wonderful recipe. RIP mom! I finally found out to make your favorite Ashe reshteh, mom. Thank you so much for making me and my mom proud.
Bah Bah, my mouth is watering! Thank you for teaching me how to make this delicious dish my mom made growing up! I have subscribed and look forward to learning how to make more (vegetarian) Persian dishes from you!
Thank you Yousef, I made your recipe today and it was so comforting and delicious. I felt the healthiness of all that green and beans making me feel better as I was eating it, and it's so warming too. I couldn't get kashk, so instead I made labne by mixing greek yogurt, salt and lemon juice and hanging the mixture overnight in a muslin cloth held with an elastic band in the top of a big yogurt pot. I then mixed part of the resulting labne back into the liquid resulting from making the labne, and also mixed some crumbled goats feta into it. It worked out delicious with labne and goats cheese also sprinkled on top, but mine was not as beautiful looking as yours! Thank you so much. We are having Persian foods week in our home and I'm so excited to try more recipes. I love all the green herbs and spinach so much.
I absolutely hate cilantro (coriander) 🤢 but I love my boyfriend and he loves this soup. He can only get it once a year from the Iranian food stall at the local international festival (we live in a very small city). So i want to make this for him. I will tolerate the soapy herb for him lol thank you for the recipe so I can surprise my love with this soup!
Hi Cyrus, thank you. Yes, I plan to add that....it's going to take some time because I have to do all the videos and time is somewhat limited right now. But, I will hopefully get to it!
Yousef, thank you for sharing the recipe. Our family loves Persian food and we are eager to try cooking at home! Your videos are great inspiration! Again, thank you for your hard work! Lots of love from Teherangeles!
Thank you so much for this video! I am making this next week for my Persian boyfriend and this video was extremely helpful. I've never had this soup but it is a favorite of his and this will help me make it correctly.
After looking a couple of recipes, I decided yours is more authentic. The only ingredientI didn't use was the Ash, not sure if the flavor really changes. The soup came out great and adding the garlic and fry mint makes a difference. My family love it!!. Thank you
Dear Yousef, I have bought the frozen vegetables for Ash. It's a pack of 400 grams. But I don't know how to compare that weight to the fresh vegetables that you listed. Could you advise about how to use the frozen vegetables? And thank you for making the best Iranian recipe videos on the internet 🙏
Thank you Agha Yousef, I want to ask how to cook hoobat ash, I hope I'm not wrong sorry, that no noodles, ònly beans ..I like it so much with baghali beans
Dear Yousef, I don’t have any fresh herbs, can I make this with dried herbs from Persian store? I do have frozen spinach already. I need to make this in two days time and would appreciate your guidance!! Thank you

Hi, thanks for your comment. I started adding the ingredients in the description box of all the latest videos and hopefully will finish doing the older ones soon. All the best :)
Can I use vinegar to make sour taste and then regular yogurt if I don’t use the whey... I still want the sour and creaminess but don’t have whey.., also thank you for your amazing recipes they are wonderful! I’ve made three so far and lamb and bean stew was delicious!
Is it okay to add the kashk to the ash? My mom always did that. Some I notice add during serving. I just made this yesterday and added an entire kashk bottle and mixed it to my cooked ash. Yummy
I think I added too many herbs. I added 125g of Coriander, Dill and parsley as well as about that same for spinach, maybe a little more of the spinach. Wasn't sure how much tumeric so I put in about 2 1/2 tsp as well as pepper and salt. So I have about a gallon of water in with the herbs, how much kashk should I use or is it a "per taste" amount?
@@CookingWithYousef Thanks so much! Just picked some up this morning. Cant wait to make it this week. Question - does it stay good overnight for leftovers? It looks delicious!
@@miramauckisch6412 I'm not sure about that. You can always just not use the Kashk and substitute it for something else when serving. My wife likes to use a little bit of vinegar instead for example.
Thank you Agha Yousef for this

Hello Yousif, thanks so much for this mouth watering recipe, I find dry Kashk in my store, how do I use it? Do I just dilute it in water?

You can, but usually, it's one or the other because of the flavor profile.

How much of each of the seasonings plz?? Do you recommend apple cider binegar or white?
Hi yousef,
I'm just wondering after adding the noodles, how long do you cook it for before adding whey?
Many love x
Add the whey right before serving the dish :)
Hey yousef , I subscribed in your channel 😀🥘🥘🥘🍛🍲🥖🥙
But you didn't tell us what you put on the top the rechte , when its done
Hi, the garnishment on top is just a bit of extra fried mint, fried garlic and kashk :)
🙏🏻🌻🙏🏻😋
:)
How about an ingredient list for easy shopping
I started adding them to the latest video. Thanks for the suggestion.
@@CookingWithYousef Let me know when you do one on halem badajum
Where can I buy kashk? Anyone have a recommendation?
Hi - Middle Eastern or Ethnic markets should carry it. You can also order online.
