Zereshk Polo ba Morgh (Traditional Persian Barberry Rice with Chicken) - Cooking with Yousef

  • Hi friends, today I will be making "Zereshk Polo ba Morgh" (زرشک پلو با مرغ) which is "Barberry Rice with Chicken". If you've been following this channel, you will notice that I have already made a version of this dish in another video.
    This one is a traditional Zereshk Polo prepared and served as you might find in a Persian household or at an Iranian Restaurant.

    Ingredients:
    - 4 Cups of Rice
    - 3 Quarters of Chicken (Leg and Thigh)
    - 1 Cup of Barberry
    - 1 Tablespoon Butter
    - 3 Tablespoon Tomato Paste
    - 1 Onion
    - 1 Lime or Lemon Juice
    - Liquid Saffron (6-7 Tablespoon)
    - Cooking Oil
    - 1 Teaspoon Salt
    - 1 Teaspoon Black Pepper
    - 1 Teaspoon Turmeric
    - 1 Teaspoon Coriander Seed Powder
    - 1 to 2 Tablespoon Sugar (or equivalent sweetener)

    When frying chicken, if you added saffron to it at the same time, it would get a better color and you could add onion in the same pan in which the chicken was fried and fry it again, but paste separately with a little lemon zest and saffron. And roasted butter tastes better, and in the end you had to add everything to cook with chicken thighs.

You'll have to upload your wife's version of her zereshk polo to see whose is better :) Have you ever tried adding a splash of rosewater to the tomato paste as you heat it up in the pan with the onions? It adds a beautiful subtle flavour that really complements the dish! Love it! Keep up the great work!

    Delicious! I cook Persian rice dishes quite often as my family loves Persian food. I cook Zereskh Polow quite often and I’m happy to tell you that your version is beyond delicious😀😀. We also love Baghali Polow and Tahchen👍👍. Just so you know, I’ve also subscribed to your channel etc.

    When I couldn't find Zereshk, I would substitute diced cranberries, it's almost as good!

    Butter & dark meat NOT good for me , I'm in my mid 50s now 😥so i gonna use Avocado cooking oil & skinless boneless chicken Breast from Costco😜

    Thanks so much for this recipe, I can’t wait to try it out! Q: what temperature do you heat the pan at ~18:18? You say to drop the temp to medium low after 8 mins. Not sure if it’s steaming in the pan for 8 mins with/without heat. Thanks in advance.

    Joonam Zereshk Polo! Been waiting for this recipe. I had a couple of questions:
    1. When you're adding the salt to the boiling water, you put a lot of salt in there. Will that not make the rice too salty?
    2. After you add the rice to the boiling water, do you keep the temperature at a high temp for the water to get to a boil again quickly, or do you bring the temp down?
    3. When you add the 1/4 cup of water + 1/4 cup oil, what temperature did you heat that at before re-adding the rice?
    4. Finally, before placing the kitchen cloth/towel on the lid to steam the rice on a low-medium heat, what temperature did you have the rice at to get it to start steaming?
    I do apologize for all the questions. But as always thank you for the video and hard work!

      Hi Ali, you end up rinsing most of the salt out so you will see that it is not too salty at all. Yes, you keep it at high at that point to boil again.

    You can add honey to your barbery and delete the sugar

    9:40 you didint say what temp high or low

      I am assuming it’s low to medium high heat to let it simmer until it cooks completely. If it’s high, it could boil too fast and won’t cook properly. I am not sure, but it’s just my thoughtful assumption.

    Thanks for letting me know Basmati rice comes from ONLY Pakistan, Bangladesh and Kashmir (didn’t know it was a separate country) ! Actually India is the largest supplier of Basmati rice to USA.
