    Hey friends, just a quick note into the health benefits of the aush - it's packed with anti-inflammatory ingredients like beans, lentils, garlic, onions, spices such as turmeric, and a generous helping of a variety of greens. To make the recipe in the traditional way, I used a fair amount of oil, but remember, you can reduce the amount as some oils might contribute to inflammation.       Recipe is good but the most unhealthy ingredient is vegetable oil which you always use in your recipe at least change your oil they are seed oil highly inflammatory

      Legumes contain phytates, which are not inflammatory. Grains are inflammatory, including noodles, made with wheat flour. PUFA oils like soy, corn and canola are inflammatory.

    A tip: Do not throw away overnight soaked water... Water it to plants it acts as a fertilizer. I am pure vegetarian and in India this practice is being followed from decades.

    This is one of my favorite soups. I have been making it for years. A Persian friend of mine had me try some and I was hooked . So she gave me the recipe , she adds some cubed beets also. Delicious .

The lady who used to look after me when I was a child was Afgani and made me those amazing foods such as Borani and Ashak and Qabuli polow and she used to love it when my mum (Iranian) made Aush reshteh!!!     As an Iranian who loves Aush resheh with her whole heart, I am SO EXCITED to see this oh my God!✨
    p.s, my mom starts cooking any type of aush in the morning on very low heat, and leaves it to cook until evening. Clearly not the best option if you're not home most of the day, but if you have the time and want to make it extra traditional and as my mom says, reduse gas even more, try leaving it on the stove from morning:))

    Oh I never thought I would see aush reshteh on your channel😅 I love it! All Persians do indeed. But I stopped making it after moving out of the country since I don’t have access to Kashk anymore. Kashk is the heart and soul of this dish and should not be skipped (unless you’re vegan of course)!

    I love that you share your culture with us! I will definitely try this if I can find a Persian market. I think there might be one in my area. Even if I can't, I'll still try it. It just won't be as authentic, which is what I love.

    I finally asked my dad to show me how he makes aash last year! He uses great northern beans, pinto beans, and brown lentils. Family friends of ours use chickpeas and other beans. My dad also uses SO MANY noodles that the soup gets super thick 😂 no one else I know makes it like that.

    Growing up in Kuwait, we used to regularly eat a dish similar to this, simply called Aash, prepared by Afghani workers in small shops- the taste is just amazing & I simply love eating these. Thanks a million for sharing this recipe here.

    Thanks for this! I've enjoyed it from the hot table of a local Persian grocer (minus the yoghurt), but had no idea of the tasty herb blend. My mom used to put spaghetti into her smokey green pea soup (which I've veganized btw), so the Reshteh is a familiar idea.

    Love this. I am from Morocco and we have something quite similar called harrira or the Ramadan soup.
