Youssef, I am so glad I found your channel. I am a 75 yr. old Italian-American woman who loves Persian food…yes..,even more than I love Italian food! (But I don’t tell my family this! ☺️) When I was in my 20’s, I knew many Iranians, lovely people. That is how I came to know Persian cuisine. But my husband and I recently retired to a very rural area in Washington state, and there aren’t any Persian restaurants within a reasonable driving distance. I loved Fesanjan, among many other fabulous Persian dishes, such as Gourmeh Sabzi, Khoresht Bey, and the rice with barberries. I want to make this beautiful Fesanjan recipe. However, several people in my family have allergies to walnuts, but not other nuts. Can Fesanjan be made with a different nut…perhaps Pecans, which are similar to walnuts? I am subscribing to your channel, and hope to find many more recipes for delicious, healthy Persian Cuisine. Merci!
Great video! I was introduced to Persian food by some dear Iranian friends I met through work. After bring invited to some of their family parties I decidedi had to learn to cook this food soi could have it at home more often! Got a couple of Persian cookbooks and started playing with it. Have adapted how I cook this dish from stewing on stovetop to roasting in the oven. I season my chicken pieces with salt, pepper, and onion powder and roast for around 30min in oven while I make the walnut sauce on stove. Theni pour the sauce over the chicken and continue in the oven for about another 20-30 min until it starts to darken up. A glorious dish! I have also used pecans instead of walnuts and it is just as sublime. Two of my friends have walnut allergies. (But the best part really is the tahdig!!) Nooshe joon!
Is there are reason you didn't use a food processor for the nuts? I assume that if you don't over-process so that the oil comes out, it would be ok? You have a very good manner about you and I'm so glad I found your channel

I think this is a dish you have to be raised on. I am not sure how many people raised in the US will like it. I agree that some sugar must be added. After hours of cooking the walnut oil come out and the sauce darken and become rich. I am not sure if I will make it again. I am glad I tried it.

Great Fessenjoon. I use organic pomegranate juice and thus no need to add sugar. Added sugar is not good for our bodies. I learnt a great deal from you and I would like to extent my gratitude to you! Thank you! ❤😊

Hi - I use a food processor but you can also use a blender. You want the walnuts to be sort of paste-like but not powdery as you want to retain some texture, so you might need to add a little bit of water in relation to the quantity of walnuts you are using. Hope it goes well.

You can use almonds, hazelnuts or pistachios instead of walnuts

Yes, this is a good one and I use it too.
I have started to make my own, but like @radioheadfanlove wrote, Sadaf Brand is always good and the one I use mostly.
