      You could just garnish with candy cane when serving if people need more peppermint too!

      The caramel is so good! I always sneak a little piece while I make the rest of the recipe. Good idea with the brown sugar video - I’ll add the link to the description! Adding candy canes when serving is a good idea too - we do that a lot to turn plain hot chocolate into peppermint.

    Stirring the sugar can cause it to cease up. It will crystallize along the edges. This recipe looks awesome. Thanks for sharing

    Oh I can't wait to try the salted caramel one. I think if I made the peppermint I would use my homemade vanilla sugar instead of brown sugar. I have never attempted homemade hot cocoa, now I will have too

      Ooh that is such a good idea - I have vanilla sugar, and I definitely would have used that in the peppermint hot cocoa if I’d thought of it!

    Lady, I am the queen of complicating any project! For little Christmas gifts, I purchased individual packets of different hot cocoa mixes (they have terrible ingredients). So, I found your video. And went through all of the trouble before going to work to make the caramelized sugar with the 3 Tbs of vanilla without realizing that I'd actually burned it, too! 😭 I'm out of time, so I think I'm pretty safe making the peppermint hot cocoa. 😄Thanks for the super fun and informative video! 🎄💖

    Stiring the sugar can cause it to cease up, it wents to crystallize when agitated at the wrong point. However it should work fine for what you are doing. As the hard Carmel is going to be powered. So it would lose the gritty texture results you could end up with if you were making carmel sauce or candy.

    Can you melt the sugar in the microwave?

      When it comes to melting sugar, the microwave is definitely the way to go. Not only is it faster than melting sugar on the stovetop, but it’s also much easier. Simply place your sugar in a microwave-safe bowl and heat it on high for 30-second intervals, stirring in between, until the sugar is completely melted.
      Just be careful not to overdo it, as sugar can easily scorch in the microwave.
      Place sugar in a microwave-safe bowl
      Heat sugar in the microwave on high power for 30 seconds
      Stir sugar, then heat for an additional 30 seconds
      Stir sugar again, then heat for an additional 30 seconds
      Sugar should be completely melted
      If not, heat for an additional 30 seconds and stir

      This works for about 1/2 c of sugar in the 30 seconds off and on. For your recipe I put the 2.5 c sugar for 3 minutes, stir 3 minutes, stir then a minute or 30 seconds until melted and it came out beautifully. Thanks for the recipe.
