    First the good news: This video and your website have the best explanation of dry method caramel on the internet as far as I've been able to tell. Thank you so very much for that. Now the bad news: I just finished whipping up a batch of caramel per your instructions, but it did not turn out well. Wait! I'm not suggesting it's your fault; it's not. I have so much history making wet method caramels, that I was not prepared---even though you warned me---for how quickly things would go. I let the temperature get away from me, and got a bit of a burned, bitter flavor. I'll try again, tomorrow, but today I'll just lick my wounds, instead of caramel. Again, thanks for your video and for your website, both of which are excellent.

      Thanks so much! If it makes you feel any better, the first time I did the dry method years ago I swore everyone was crazy and that it didn't work! I gave up the first time when I saw all those clumps, then I burned 2 batches. After that it was a breeze and I love the dry method now!

    I make caramel all the time and this is a different way that I am going to try, Also another way to cut your caramel is with a pizza cutter, it works great. Thanks for posting.

    In the UK we have a candy selection called Quality street. It has a caramel called toffee Penny. They are really creamy. Us Brits would love the melted caramel you are turning into chews xx

      Quality street in canada to. The Carmel there is really good. I love how hard to chew the Carmel ones are. I prefer hard to chew Carmel’s. Or so much the soft ones. I will make this one. See what it’s like, it sure how to get the hard To chew carmels texture.

    We never used a thermometer either. Always the water test 😊 And we cut ours with candy scissors and we would stack our tray on top of another tray with ice water so that it cools faster after dipping in chocolate.

    I’ve never made caramels before, but this looked so easy. I made jalapeño peanut brittle today and it rained here in Texas, so the brittle wasn’t brittle, more like chewy! I should have waited a day or two because I knew better. I did wait for a dry day to make Divinity and it turned our great! I have to try these caramels. Thanks for showing how to make them.

    These actually look so easy and nice. My dad always made caramels etc in our house when I was younger and since him and Mum are both gone I haven’t bothered but seeing you make this I thought why not give it a go.     Glad I am not the only one who prefers unsalted caramel.
    Can't wait to make these. I never thought about making my own. I love Sanders caramels, but now they only come with that salt on them. Im local to the factory and every single caramel they sell has that salt on it. I had to pass. Such a disappointment. These look wonderful! Thanks for sharing!❤

    I ABSOLUTELY LOVE watching you do your thing!!! I know I've been following for over a year because I watched some of your videos last year for Christmas!! LOL!!! You ALWAYS brighten my day, lift my mood by 4 or 5 notches at least and not that you are but your presence feels much like you're a cousin to me, if that makes any sense...LOL!!! You know when you have the one cousin you're closer to than your own sister or mom and you do a lot of things together.... I kind of get a feeling similar to that even though we don't know each other and aren't even in the same city/town much less the same room! You are just that kind of special where the love and compassion you have for others, and that you're a natural born teacher, comes through the screen and can be felt by those taking in more than a simple cooking lesson or just the recipe.     For those of us not crazy about sales caramel, would this recipe work with just a pinch of salt, instead of the amount you put in this recipe? Just curious.

    The store-bought ones are hard to find, very expensive and sometimes have questionable ingredients in them! Thank you so much! I would never attempt this without first having watched your video! I have LPR and can't have chocolate right now, but I'm going to try dipping them in melted carob chips. 0 (big hug for you)

    I've done this method for decades but I use a " mash " potato pan and always a wooden spoon I also poor it in a cookies sheet (for double batches) then cut it pieces when set and wrap in wax paper

    I made these yesterday and let me say your glass bowl in the instant pot is a game changer! Followed your recipe to a T, used a pizza wheel to cut them, and that was wonderful- so you'll have to try that. They turned out perfect, and I added flakes of sea salt on half of them just in case you stopped by for a bite😂. I made your peppermint patties a couple years ago and they were perfect. Thank you for all your great recipes and guidance I get from your videos! So talented!!

    Yummmm one of my favorites!! I've made caramel sauce a lot, but have never made candy. I'll definitely be trying this one! I also prefer doing dry caramel. Never understood adding water then having to wait til all the water cooks out.

Many of the ingredients l see in some American recipes are simply not available here in Aotearoa/ New Zealand or are prohibitively expensive or just something l simply don't want to eat - looking at you corn syrup. I'm looking forward to making my first batch.

    Dry Carmel is the ONLY way I can make it and it comes out right. I will be trying this as well. I usually put my Carmel inside something I’m making, so I’ve never made them in the pan this way. Will be trying this.

    You amaze me at everything that you make but this here has just blown my mind away now when I go to my job and I work in like a store and I work in the baking aisle all the time I have to deal and stock a lot of sugar and now when I see the sugar no I'm going to see is caramel and it does just blows my mind I thank you for sharing this and I have been watching you ever since I have learned with you and I want to cry because I think you because when my mom was alive she had died this month last year and it just seems like yesterday she taught me everything she knew and then I have a sense to know how to critique her recipes it expanded her business she was on a show called policans live she was well known at the farmers market and I just wish that I could still be in those areas of where she was to give let people try new things because even at my job I have come up with so many new ideas of anywhere from muffins to cakes to pies I have a very creative imagination and this is what I was known for in school even though I wanted to study to be a veterinarian or economical science but with the passing of my mom and try to make it on my own it's just really hard to try to keep the bills paid and try to cook and I have no TV no nothing they came in and took all of my mom's stuff no bed and stuff but that's besides the point you and some other Cooks is all I've got this is all I've studied since Christmas since I was alone and you have blown my mind and I thank you for you sharing your recipes so it would be easier for me to make things as you show then to go out and try to buy I think it gives me more an idea of life and to create fun for me bless your heart and thank you so much but this one here has really taken the cake thank you so much. ......... six

    Looks like my kitchen today. Only I was making turtles candy for Christmas on Sunday. ( if they last that long)I haven’t tried the dry method. I’m certainly keen to try it. Those chocolate covered caramels look wonderful. Caramel and chocolate, match made in heaven.

      Thanks! A lot of non stick pans these days are being made so metal utensils can be used in them so it’s not necessarily a bad thing. Making candy with metal utensils isn’t the best choice though because of the way metal conducts heat. It will cool the caramel by absorbing the heat.

    Love All your vids Louise, thanks for sharing recipes & demonstrating so aptly. I was wondering where ppl can purchase those little papers as for wrapping the caramel chews? Would those be appropriate to wrap the peppermint patties or other homemade candies? I am now knowing if I should individually wrap for gifting or just assemble without a wrapper before boxing, glass jar, or whatever!!

    I had the same thing happen with the caramel pieces getting too soft and spreading too flat. I rolled the pieces in a ball and popped them in the freezer for half hour before coating with chocolate. Yes, you might have to periodically heat your chocolate back up for 30 seconds in the microwave. It won't stay in a perfect ball after being coated ( don't forget to add your flaked salt immediately after coating ) the bottom will flatten but they will still look fine.

    I've made the Fanny Farmer Mr. B recipe many times...takes an hour of stirring and cooking (removes moisture) to get the caramel up to candy temp. The result is wonderful. I wonder what the taste difference is with cooking the sugar first, versus longer cooking time?

    What kind of pan are you using? I have an induction top also but I need a good non stick
